  • 1 doz fresh ears of corn cut off the cob, or possibly 2 pounds frzn corn
  • 4 ounce unsalted butter
  • 1 x bell pepper, diced
  • 1 x onion, diced
  • 1 x fresh tomato, peeled, seeded and diced
  • 1/2 lb cooked crawfish tail meat Cayenne and black pepper to taste Salt to taste

  1. In large saucepan heat butter over medium heat. Add in all remaining ingredients except the crawfish and cook covered till corn starts to get tender, about 15 min. Add in crawfish and continue cooking till corn is tender, about five more min.
  2. Yield: 12 servings.
