- In a shallow bowl, beat Large eggs and lowfat milk. In another shallow bowl, combine cracker crumbs, garlic salt, oregano, tarragon and pepper. Cut perch into serving-size pcs; dip in egg mix, then coat with crumbs.
- Heat oil in a skillet over medium heat. Fry fish for several min on each side, or possibly till it flakes easily with a fork.
- This recipe yields 4 servings.
