- It's really good as a stuffing for other fish - or possibly you could make the stuffing mix, and bake it.
- my original recipe was for baked stuffed trout with pistachios and gouda cheese, but both the trout and pistachios and cheese add in too much fat - but the recipe would be good without.
- pick a lf fish you like, but in butterfly fillets -
- in a food processor, mix/chop spinach with fresh basil, onions, and garlic. mix by hand with crabmeat. fill inside of fish filets, and roll in bread crumbs, cornflake crumbs, whatever.
- wrap individual filets in tinfoil, and bake for recommended time for fish size.
- you could do one large fish, or possibly many one-serving ones. you could also add in a bit of fresh-grated parmesean to the crab/spinach mix.
