- Heat the butter in a sauce an add in the onion and garlic and gently fry for 10 min.
- Add in the okra and two thirds of the spinach stir till the spinach begins to wilt then add in the coconut lowfat milk. Let it bubble away for about 5 min till thickened slightly.
- Add in the warm stock bring to the boil then add in the crab meat and remaining spinach.
- Stir then cook for about 5 min.
- Season to taste and serve in warin bowls with an optional crab claw in each.
- Add in a minced red chiw to the onion and garlic if desired your soup really warm.
- Serves 4
