%20or%20to%20make%20it%20at%20home%20in%20a%20juicer%20(I%20don't%20have%20one).%20So%20I%20made%20my%20own%20using%20my%20method%20noted%20below.%20I%20also%20used%20jicama%20in%20place%20of%20daikon%20and%20mache%20in%20place%20of%20frisee.%20To%20see%20what%20other%20modificaitons%20I%20made,%20you're%20just%20going%20to%20have%20to%20get%20a%20copy%20of%20the%20French%20Laundry!%3C/p%3E%3Cp%3EIt%20proved%20to%20be%20a%20hit%20with%20Jeff%20and%20my%20parents%20and%20it's%20a%20first%20course%20I'll%20make%20again.%20It's%20not%20too%20complicated%20and%20it%20really%20does%20plate%20beautifully.%20Give%20it%20a%20shot.%20We%20had%20the%20leftover%20crab%20the%20next%20day%20without%20any%20cucumber%20jelly%20and%20it's%20still%20delish.%20So%20if%20the%20jelly%20scares%20you,%20make%20the%20rest%20of%20the%20dish%20without%20it.%3C/p%3E%3Cp%3ECrab%20salad%20with%20Cucumber%20Jelly,%20Grainy%20Mustard%20Vinaigrette%20and%20Mache%3C/p%3E%3Cp%3Eadapted%20from%20The%20French%20Laundry%20by%20Thomas%20Keller%3C/p%3E%3Cp%3EPlace%20the%20chunks%20of%20cucumber%20in%20a%20blender%20and%20puree.%20(Add%20a%20little%20water%20if%20needed%20to%20get%20it%20started.).%20Line%20a%20mesh%20strainer%20with%20a%20few%20layers%20of%20cheesecloth%20and%20place%20over%20a%20bowl.%20Pour%20the%20cucumber%20puree%20into%20the%20strainer%20and%20let%20sit.%20You%20need%201%20cup%20of%20cucumber%20juice%20(I%20got%20plenty%20from%201%201/2%20medium%20cucumbers).%20Set%20the%20juice%20aside.%3C/p%3E%3Cp%3EUsing%20a%20mandoline%20or%20sharp%20knife,%20cut%20lengthwise%20slices%20about%201/8%20inch%20thick%20from%20the%20half%20cucumber.%20Cut%20the%20slices%20into%20narrow%20strips%20about%201/8%20inch%20wide%20and%20then%20cut%20the%20strips%20at%20an%20angle%20to%20make%20diamonds.%20You%20will%20need%20about%202%20tablespoons%20of%20diamonds.%20Set%20aside.%3C/p%3E%3Cp%3EMix%20the%20gelatin%20with%20the%20warm%20water%20and%20stir%20to%20dissolve.%20When%20the%20gelatine%20has%20dissolved,%20whisk%20it%20into%201%20cup%20of%20cucumber%20juice.%20Pour%20a%20thin%20layer%20of%20the%20juice%20onto%20each%20of%204%20serving%20plates.%20Discard%20any%20excess%20(I%20used%20square%20plates%20and%20used%20just%20about%20all%20of%20the%20juice).%3C/p%3E%3Cp%3EArrange%206%20dill%20sprigs%20around%20each%20plate%20and%20some%20of%20the%20cucumber%20diamonds.%20Leave%20the%20center%20open%20as%20this%20is%20where%20the%20crab%20will%20go.%20Put%20the%20plates%20in%20the%20refrigerator%20to%20set%20for%20at%20least%20one%20hour.%20(My%20refrigerator%20shelves%20were%20a%20bit%20uneven,%20so%20I%20used%20folded%20index%20cards%20to%20make%20sure%20the%20juice%20didn't%20collect%20on%20one%20side%20of%20the%20plate!)%3C/p%3E%3Cp%3EBefore%20serving,%20whip%20the%20cream%20in%20a%20medium%20bowl%20until%20it%20forms%20a%20ribbon%20when%20the%20whisk%20is%20lifted.%20Whisk%20in%20the%20mustard%20and%20salt%20and%20pepper%20to%20taste.%20Place%20the%20crab%20in%20a%20separate%20bowl%20and%20fold%20in%20just%20enough%20of%20the%20cream%20mixture%20to%20bind%20the%20salad.%20(Don't%20just%20dump%20the%20crab%20into%20the%20cream%20because%20you%20may%20have%20too%20much%20whipped%20cream.)%3C/p%3E%3Cp%3EToss%20the%20greens,%20radicchio%20and%20jicama%20with%20a%20little%20olive%20oil%20and%20the%20lemon%20juice%20and%20season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EFill%20a%202%20to%202%201/2%20inch%20ring%20mold%20or%20cookie%20cutter%20with%20the%20crab%20mixture%20(pack%20it%20in%20so%20the%20shape%20holds)%20and%20carefully%20place%20over%20the%20center%20of%20the%20plate.%20Lift%20the%20mold%20off%20and%20then%20top%20the%20crab%20with%20a%20bit%20of%20the%20greens%20and%20a%20few%20extra%20dill%20sprigs.%3C/p%3E%3Cp%3ENote:%20don't%20take%20the%20plates%20out%20fo%20the%20fridge%20too%20soon%20or%20the%20gelatin%20will%20soften.%20If%20that%20happens,%20stick%20them%20back%20in%20the%20fridge%20for%20a%20few%20minutes%20to%20harden.%3C/p%3E%3Cp%3EMakes%20about%204%20servings.%3C/p%3E){kind=link}
