  • 1 pound crab meat
  • 1 egg, beaten
  • 1/2 c. Saltines, crushed
  • 1/3 c. fresh parsley, chopped
  • 2 Tbsp. mayonnaise
  • 1/2 tsp. paprika or possibly Old Bay seasoning
  • cayenne pepper or possibly Morton's Warm Salt
  • onion pwdr for sprinkling
  • butter or possibly extra virgin olive oil for frying

  1. Remove any shell from crab. In a medium bowl, toss together crushed Saltine cracker crumbs, egg, parsley and mayonnaise till moistened, but don't over mix. Add in salt and pepper.
  2. Form into five or possibly six cakes, 1/2 to 3/4 inches thick. Place in refrigerator on cookie sheet for at least one hour so they will set up. Sprinkle lightly with cayenne or possibly Morton's Warm Salt and onion pwdr.
  3. In a heavy skillet, fry crab cakes in butter (or possibly extra virgin olive oil), turning once till both sides are nicely browned (about 10 min).
