- In saucepan, bring stock to boil; reduce heat to medium. Add in zucchini; simmer for 2 min.
- Remove from heat. Add in couscous and lemon rind; stir once. Cover and let stand for 5 min. With fork, stir in onions, parsley, and salt and pepper to taste.
- Makes 4 servings.
- Couscous is an instant grain which is fluffy and ready to eat just 5 min after it is combined with boiling liquid. I use whole wheat couscous, that tastes the same as refined wheat couscous but has more fibre. (The National Grocers chain in Canada sells this packaged as part of its "President's Choice" line of products. In this case, it is "Maharajah's Choice".)
