- Prepare couscous according to package directions.
- Heat extra virgin olive oil in large skillet over medium-high heat. Add in onions; cook, stirring often, till caramelized, about 7 min. Add in tomato, squash, carrot, chickpeas, turmeric and coriander; stir. Cook, about 8 min. Add in cabbage, bell pepper, broth, salt and pepper. Simmer covered, till chickpeas and squash are tender, about 15 min.
- Toss cilantro and couscous with vegetables. Serve hot or possibly cool.
