As my kids enjoyed the Couscous muffins that I baked earlier to my utter surprise, the elder one asked me if nothing could be made sweet out of Couscous. That fellow has a big sweet tooth and that got me thinking of what else I could put the remaining couscous to good use to while making sure that the kids also ate it without complaining and remember that I saw several salad recipes with couscous as the main ingredient which was a big no to them and I did not want to waste the remaining as it was very costly being an imported item. This recipe was just perfect that fit my requirements to the T.

Puttu is something that could be whipped up in a jiffy and that if it is with Couscous that is considered very healthy, you need not have to think twice at all. Actually this recipe requires no cooking time at all if you consider heating up water to cook Couscous al dente. It is that quick and look no further to fill yourself up with a healthy and hearty breakfast or for a quick snack fix.

The first time I made, I did not pulse the Couscous and found that it was way to grainy to have it as it is. So, the next time I pulsed it to break it down. You can skip this step if you do not mind the grainy texture. Also as the flavor of couscous was nil, I added coconut oil for added flavor and aroma.

Couscous Puttu / Sweet Couscous

Instructions:

1. Place the couscous in a mixer and pulse it at regular interval for 1 minute. The couscous will be broken by now. (This step is optional).

2. Transfer it to a bowl. Meanwhile heat a pan with water and add salt.

3. Pour the hot water over the couscous. Stir well and keep the bowl closed with a lid and leave it undisturbed for 3-4 minutes.

4. Now add coconut oil, grated jaggery, coconut, cardamom powder and mix well with a fork.

5. Sprinkle sugar on top and serve hot.

Notes:

You can replace jaggery with sugar.

If you do not mind the calories you can swap coconut oil for ghee/clarified butter.
