%20and%20you%20want%20to%20take%20it%20a%20step%20further,%20pick%20up%20a%20copy%20of%20this%20book%20and%20start%20at%20the%20very%20beginning.%20%20This%20is%20one%20of%20the%20few%20books%20that%20I%20feel%20you%20really%20must%20read%20all%20the%20information%20that%20comes%20before%20the%20recipes%20and%20then,%20read%20it%20again%20a%20few%20more%20times.%20%20Yes%20folks,%20this%20is%20more%20like%20a%20textbook%20and%20a%20workbook%20rolled%20into%20a%20collection%20of%20recipes.%3C/p%3E%3Cp%3EPersonally,%20making%20artisan%20breads%20leavened%20with%20a%20natural%20yeast%20culture%20is%20another%20of%20those%20skills%20I%20have%20always%20wanted%20to%20develop%20but%20even%20though%20I%20am%20a%20pastry%20chef%20and%20I%20bake%20for%20a%20living,%20I%20have%20never%20pursued%20bread%20baking%20as%20a%20career.%20%20Having%20had%20some%20time%20to%20spend%20in%20my%20new%20kitchen,%20I%20decided%20to%20take%20my%20own%20sourdough%20culture%20out%20of%20the%20fridge%20and%20try%20it%20in%20one%20of%20the%20recipes.%20%20Because%20there%20is%20a%20need%20for%20exact%20measurements%20and%20conditions,%20I%20took%20a%20cup%20of%20my%20starter%20and%20began%20the%20process%20of%20feeding%20it%20as%20the%20book%20instructs.%20%20%20And%20to%20test%20it,%20I%20started%20with%20the%20Country%20White%20bread,%20the%20very%20first%20recipe%20in%20the%20book.%3C/p%3E%3Cp%3ENancy%20instructs%20you%20%E2%80%9Cnot%20to%20do%20a%20thing%20until%20you%20read%20the%20recipe%20carefully%20and%20calculate%20the%20times%20involved%E2%80%9D%20and%20that%20is%20just%20the%20beginning.%20%20This%20recipe%20is%2014%20pages%20long.%20%20Suddenly,%20I%20was%20intimidated%20and%20the%20reasons%20I%20have%20never%20sought%20out%20a%20job%20baking%20bread%20for%20a%20living%20were%20staring%20me%20in%20the%20face.%20%20Never%20the%20less,%20I%20did%20as%20told%20and%20read,%20reread%20and%20then%20read%20the%20recipe%20again.%20%20Once%20I%20had%20written%20out%20my%20bread%20schedule,%20I%20got%20to%20work%20on%20making%20my%20first%20loaf,%20a%20two-day%20bread%20baking%20experience.%3C/p%3E%3Cp%3EThere%20are%20so%20many%20steps,%20resting%20periods%20and%20so%20forth%20that%20I%20would%20be%20in%20danger%20of%20plagiarizing%20the%20book%20if%20I%20typed%20it%20out%20here%20so%20let%20me%20suggest%20that%20if%20you%20want%20to%20try%20making%20a%20loaf,%20get%20a%20copy%20of%20the%20book.%20%20Truly%20this%20book%20is%20a%20worthwhile%20reference%20on%20bread%20making%20and%20it%20deserves%20a%20space%20on%20the%20shelf%20of%20serious%20bread%20bakers.%20%20For%20a%20first%20attempt,%20I%20think%20the%20bread%20turned%20out%20pretty%20good%20and%20if%20I%20judge%20it%20by%20the%20amount%20my%20husband%20ate%20that%20first%20day,%20I%20would%20say%20it%20was%20a%20successful%20attempt.%20%20Was%20it%20perfect?%20%20Absolutely%20not.%20%20Somehow,%20I%20added%20too%20much%20flour%20to%20the%20dough%20and%20I%20will%20say%20that%20the%20way%20the%20instructions%20for%20mixing%20by%20machine%20are%20written,%20they%20tell%20you%20to%20add%20the%20flour,%20meaning%20all(measured%20with%20a%20scale-not%20by%20the%20cup)%20of%20it%20at%20once.%20%20It%20isn%E2%80%99t%20until%20several%20sentences%20later%20that%20it%20suggests%20holding%20some%20back%20to%20adjust%20the%20consistency.%20%20Too%20late.%20%20My%20dough%20was%20a%20little%20stiffer%20than%20it%20should%20have%20been%20and%20it%20made%20the%20machine%20kneading%20process%20impossible-I%20could%20hear%20my%206%20quart%20Kitchen%20Aid%20struggling%20and%20switched%20to%20kneading%20by%20hand.%20%20This%20was%20not%20an%20easy%20task%20and%20I%20kneaded%20the%20dough%20quite%20a%20bit%20longer%20than%20called%20for.%3C/p%3E%3Cp%3EJust%20as%20the%20instructions%20are%20involved,%20so%20are%20the%20ingredients%20called%20for%20throughout%20the%20book.%20%20A%20quick%20glance%20at%20a%20few%20recipes%20had%20me%20wondering%20where%20I%20could%20find%20rye%20chops%20and%20food%20grade%20lye%20near%20my%20home.%20%20Then%20I%20looked%20at%20the%20equipment%20needed,%20I%20really%20need%20to%20find%20some%20english%20muffin%20rings%20or%20tuna%20cans%20that%20can%20be%20opened%20on%20both%20ends%E2%80%A6This%20will%20be%20a%20learning%20experience,%20a%20slow%20one%20and%20one%20I%20plan%20to%20enjoy,%20one%20loaf%20at%20a%20time.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
