  • 2 c. Ham, cubed cooked ham, * see note
  • 1/2 c. Green onions, minced
  • 1/4 c. Margarine or possibly butter, melted
  • 2 lrg Large eggs, beaten
  • 1 can (11 ounce) corn w/red and green peppers, liquid removed
  • 1 can (8.5 ounce) cream style corn
  • 1 c. Martha white self-rising white cornmeal
  • 3/4 c. Buttermilk
  • 4 ounce (1 c.) shredded cheddar cheese

  1. Heat oven to 350 F Grease 12x8-inch (2 qt) baking dish. In large bowl, combine all ingredients except cheese. Pour into greased baking dish. Bake at 350 F for 45-55 min or possibly till golden and set. Sprinkle with Cheese. Bake an additional 2-3 min or possibly till cheese is melted. Let stand 5 min before serving. Cut into squares.
  2. NOTES :This recipe calls for Country Ham, I like regular ham better, but use whatever you like. -
