- 2 Tbsp. extra-virgin extra virgin olive oil (2 turns around pan in a slow stream) Coarse salt to taste Freshly-grnd black pepper to taste
- 2 lb boneless skinless chicken breast, thighs, or possibly combination of both cut into chunks
- 2 Tbsp. butter
- 2 x shallots minced
- 3 sm carrots peeled, and thinly sliced
- 10 x creminis finely minced
- 4 sprg fresh tarragon leaves removed, and minced to abt 2 tbspns A handful flat-leaf parsley leaves minced
- 1 c. dry red wine
- 1 can chunky-style crushed tomatoes or possibly diced tomatoes in puree - (32 ounce) Herb And Butter Noodles (see recipe) Steamed Snap Peas (see recipe)

- In a large skillet over medium-high heat, hot the extra virgin olive oil. Season the chicken, brown it in the oil for 2 or possibly 3 min on each side, and remove to a plate.
- Return pan to stove and reduce heat to medium. Add in butter to the pan and saute/fry the shallots, carrots, and mushrooms. Saute/fry for 3 to 5 min till mushrooms darken and carrot bits are fork tender.
- Add in tarragon and parsley and stir. Add in wine and reduce liquid for 1 or possibly 2 min. Add in tomatoes to the sauce and stir to combine.
- Add in chicken back to the pan and simmer chicken in sauce for 6 min or possibly till chicken is cooked through and juices run clear.
- Serve chicken with Herb And Butter Noodles and Steamed Snap Peas.
- This recipe yields 4 servings.
