- Preheat the fryer to 360 degrees. Season the oysters with salt and pepper.
- In a shallow bowl, combine the cornmeal and flour and season with Creole seasoning. Dredge the oysters in the flour/cornmeal mix, coating completely. Fry till crispy, 2 to 3 min.
- Remove from the fryer and drain on paper towels. Season with Essence.
