- 1 1/2 c. sifted all-purpose flour
- 3/4 c. yellow cornmeal
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1/2 tsp grnd cinnamon
- 1/2 tsp grnd nutmeg
- 3/4 c. lowfat milk (skim, low-fat, soy or possibly rice)
- 1/4 c. apple juice or possibly cider
- 1/3 c. honey
- 1/3 c. vegetable oil
- 2 x Large eggs
- 3/4 c. grated cheddar cheese
- 1 med apple (Granny Smith, Braeburn, Empire)

- Heat oven to 400 degrees. Grease 12 large or possibly 18 small muffin c.. In a large bowl, stir together flour, cornmeal, baking pwdr, baking soda, cinnamon and nutmeg. In a small bowl, mix together lowfat milk and apple juice. Beat in honey, oil and Large eggs. Make a well in center of dry ingredients. Pour in liquids and cheese.
- Stir to barely combine batter.
- Peel, core and finely dice apple. Stir into other ingredients till batter is just lumpy, not smooth. Fill each muffin c. about two-thirds full. Bake 25 min, or possibly till a skewer inserted into center of a muffin comes out clean.
- Remove from muffin c. immediately and cold on wire rack or possibly serve warm.
