  • 1 1/2 c. flour, sifted
  • 1/3 c. cornmeal
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 2 tsp sugar tsp freshly cracked black pepper
  • 1 x lemon, grated, zest of
  • 1/4 c. melted butter
  • 3 x egg
  • 2 c. buttermilk, at room temperature Manchego cheese, for garnish Tomatillo Salsa
  • 1/4 c. extra virgin olive oil
  • 1/2 x vidalia onion, roasted
  • 3 clv garlic, minced
  • 10 x cherry tomato
  • 8 ounce roasted tomatillo salt freshly cracked black pepper
  • 8 x pequin pepper or possibly 2 red pepper
  • 1 x lime, juice of
  • 1 sm jalapeno pepper, roasted
  • 1 tsp honey
  • 1 x ears corn, roasted, kernels, removed from the cob
  • 2 Tbsp. extra virgin olive oil
  • 1/3 c. fresh coriander, minced

  1. In a medium bowl, sift together the flour, cornmeal, salt, baking pwdr, soda, sugar and pepper. Stir in grated lemon zest.
  2. In another medium bowl, whisk together the melted butter, Large eggs and buttermilk till smooth. Make a well in the dry ingredients and gradually stir in the wet ingredients till just combined. Don't over mix. Let stand covered for 30 min. Ladle waffle mix into prepared waffle pan and cook according to manufacturers' instructions.
  3. Tomatillo Salsa:In extra virgin olive oil saute/fry roasted onion, garlic, cherry tomatoes and tomatillos for 5 min. Transfer to a food processor. Pulse till coarsely minced. Season. Transfer to bowl. Stir in remaining ingredients. Let rest 2 hrs before serving.
  4. Serve waffles with salsa and garnish with Manchego cheese.
