Ингредиенты

  • 1 tsp Grated coriander seed
  • 1 tsp Grated cumin seed
  • 1 tsp Grated star anise
  • 2 Tbsp. Extra virgin olive oil
  • 4 Tbsp. Butter
  • 1/2 x Chopped yellow onion
  • 1/4 lrg Diced red onion
  • 3 c. White or possibly green cabbage
  • 1/4 lrg Diced red pepper
  • 1/4 lrg Diced yellow pepper
  • 1/4 lrg Diced green pepper
  • 1 1/2 c. Orange juice Salt and pepper to taste
  • 1 c. Lobster stock
  • 6 ounce Sushi grade tuna
  • 3 Tbsp. Whole coriander seeds
  • 1 Tbsp. Star anise
  • 1 pch Salt and pepper

Инструкции

  1. Toast spices in saute/fry pan over high heat till aromatic, then grind in a coffee mill.
  2. Heat extra virgin olive oil and butter, then saute/fry chopped onions and grnd spices. Add in cabbage, spices, and diced peppers and cook till tender.
  3. Add in orange juice and salt and pepper. Let simmer, then add in lobster stock and reduce. Dredge tuna in coriander crust. Pan sear to to temperature. In a bowl, place cabbage then top with seared tuna.
  4. Yield: 1 serving
