Ингредиенты

  • 6 Tbsp. Butter
  • 3 Tbsp. Flour
  • 1 tsp Salt
  • 1/8 tsp White pepper
  • 2 c. Light cream
  • 1/2 lb Scallops, sliced
  • 1/4 c. Finely minced onion
  • 1/2 c. Sliced mushrooms
  • 1/2 lb Shrimp, cooked & cleaned
  • 1/4 lb White crab meat
  • 2 Tbsp. Madiera wine
  • 3 tsp Bread crumbs

Инструкции

  1. In double boiler heat 4 tbs butter; blend in flour, salt & pepper. Over direct heat gradually add in cream, stirring constantly to boiling point.
  2. Return to double boiler & cook 5 min more. Heat remaining butter in skillet; add in scallops & onions & saute/fry. Remove scallops & onions. Add in mushrooms & saute/fry 3 min. Combine sauce, scallops, mushrooms, shrimp, crab & wine. Mix lightly & taste for seasonings. Spoon into 6 scallops shells or possibly ramekins & sprinkle with bread crumbs. Bake in 400 oven for 10 min or possibly till delicately browned. Serve at once.
  3. Yields 6 servings.
