%20and%20cook%20for%20several%20hours%20(as%20the%20coq%20would%20tend%20to%20be%20a%20tough%20old%20bird%20-%20but%20full%20of%20flavor).%3C/p%3E%3Cp%3EYou%20can%20use%20a%20whole,%20cut-up%20chicken,%20(broiler-fryer)%20or,%20do%20what%20I%20did,%20use%20skinless%20breasts%20and%20thighs.%20Without%20the%20skin%20the%20flavors%20get%20deeper%20into%20the%20meat%20and%20we%20eliminate%20a%20lot%20of%20the%20fat.%3C/p%3E%3Cp%3EUse%20a%20full-bodied%20Burgundy%20or%20Cote%20de%20Rhone%20(or%20equivalent)%20for%20this.%20Not%20expensive,%20but%20drinkable.%20Do%20not%20use%20'cooking%20wine'.%3C/p%3E%3Cp%3EThe%20secret%20to%20this%20dish%20is%20the%20cocoa%20-%20it%20gives%20an%20amazing%20richness%20and%20depth%20of%20flavor.%3C/p%3E%3Cp%3ECoq%20au%20Vin%3C/p%3E%3Cp%3E6%20-%208%20shallots%20(the%20recipe%20calls%20for%20pearl%20onions%20but%20I%20normally%20have%20to%20buy%20a%20huge%20bag%20to%20get%20the%20few%20I%20want,%20so%20I%20often%20use%20shallots..%20Plus%20I%20like%20the%20taste%20better)%3C/p%3E%3Cp%3E1%20chicken%20stock%20cube%20or%201%20tsp%20granular%20or%20paste%20chicken%20base,%20optional%3C/p%3E%3Cp%3Epinch%20of%20nutmeg%3C/p%3E%3Cp%3E1%20tbs%20pure%20cocoa%20not%20a%20'hot%20chocolate'%20mix%3C/p%3E%3Cp%3E2%20tbs%20cornstarch%20(corn%20flour,%20maizena)%20dissolved%20in%203%20tbs%20water%20(you%20may%20not%20use%20it%20all)%3C/p%3E%3Cp%3ETo%20marinate:%20Roughly%20chop%20the%20onion%20and%20carrot.%20Smash%20the%20garlic%20lightly.%20Put%20the%20chicken,%20onion,%20carrot,%20garlic%20and%20bouquet%20garni%20in%20a%20deep%20bowl.%20Pour%20the%20wine%20over%20and%20refrigerate%20at%20least%204%20hours%20or%20overnight.%3C/p%3E%3Cp%3ETo%20cook%20the%20chicken:%20Remove%20chicken%20from%20marinade%20and%20drain%20well%20(over%20marinade).%20Reserve%20marinade.%20Heat%20oil%20in%20heavy,%20deep%20pot%20over%20medium-high%20heat.%20Brown%20chicken%20on%20all%20sides,%20a%20few%20pieces%20at%20time,%20about%2010%20minutes.%20Return%20all%20chicken%20to%20pan%20and%20pour%20over%20reserved%20marinade%20and%20vegetables.%20Add%20nutmeg%20and%20chicken%20base%20(if%20using).%20Cover,%20bring%20to%20a%20simmer,%20reduce%20heat%20and%20simmer%20for%20an%20hour.%3C/p%3E%3Cp%3ETo%20cook%20the%20vegetables:%20Clean%20mushrooms%20and%20shallots,%20leaving%20shallots%20and%20small%20mushrooms%20whole;%20slice%20large%20mushrooms%20in%20half.%20In%20nonstick%20skillet%20saut%C3%A9%20bacon%20until%20crisp.%20Remove%20and%20crumble%20(don't%20eat!)%20Add%20shallots%20to%20pan%20with%202%20tbs%20water,%20cover%20and%20cook%20for%2010%20minutes.%20Uncover%20and%20cook%20off%20liquid.%20Add%20mushrooms%20to%20skillet%20and%20saut%C3%A9%20over%20medium%20heat%20until%20both%20are%20nicely%20browned%20on%20all%20sides%20about%2015%20minutes.%20When%20done,%20cover%20until%20time%20to%20add%20to%20chicken.%3C/p%3E%3Cp%3ETo%20finish:%20Remove%20chicken%20from%20pan%20and%20cover%20to%20keep%20warm.%20Strain%20sauce,%20discarding%20solids.%20Return%20sauce%20to%20pan%20removing%201/2%20cup.%20Bring%20sauce%20to%20a%20boil%20over%20medium%20heat.%20Put%20cocoa%20into%20a%20small%20bowl.%20Slowly%20whisk%20in%201/2%20cup%20reserved%20sauce.%20Slowly%20whisk%20cocoa%20mixture%20into%20simmering%20sauce.%20Continue%20whisking%20until%20it%20returns%20to%20a%20boil.%20Reduce%20heat%20to%20a%20simmer%20and%20allow%20to%20reduce%20slightly,%20about%205%20minutes.%20Dissolve%20cornstarch%20in%20water.%20Use%20to%20thicken%20sauce%20to%20desired%20consistency%20if%20needed.%20(The%20cocoa%20will%20thicken%20it%20slightly.)%20I%20used%20about%20half%20-%20the%20sauce%20is%20supposed%20to%20be%20a%20bit%20thick%20but%20not%20gluey.%20Return%20chicken%20to%20pan%20along%20with%20mushrooms,%20shallots%20and%20bacon.%20Allow%20to%20heat%20through%20over%20low%20heat,%2010%20-%2015%20minutes.%20Arrange%20chicken,%20mushrooms%20and%20shallots%20on%20a%20small%20platter.%20Spoon%20some%20sauce%20over%20and%20serve%20the%20rest%20on%20the%20side.%3C/p%3E%3Cp%3EOf%20course%20there%20are%20leftovers.....%3C/p%3E%3Cp%3EJust%20reheat%20and%20toss%20with%20some%20cooked%20pasta.%3C/p%3E%3Cp%3EI%20resisted%20the%20urge%20to%20just%20heat%20the%20sauce%20and%20eat%20it%20with%20a%20spoon....but%20only%20just....%3C/p%3E%3Cp%3EHow%20does%20the%20cocoa%20work%20this%20magic,%20transforming%20a%20merely%20good%20sauce%20to%20one%20fit%20for%20the%20gods?%3C/p%3E%3Cp%3EAre%20we%20mere%20mortals%20meant%20to%20know?%20%20Who%20cares,%20it%20works.%20%20It's%20sooo%20good%20it%20deserves%20my%20D.O.%20award!%20%20(digestive%20orgasm).%3C/p%3E){kind=link}
