  • 4 x Fillets of fresh cod *
  • 1 x Egg white
  • 2 Tbsp. Cornstarch
  • 2 c. Oil for frying
  • 1 x Clove garlic
  • 1/2 x Leek
  • 7 x Chives or possibly scallions
  • 1 x Bean curd
  • 2 Tbsp. Peanut oil
  • 4 ounce Grnd beef
  • 2 Tbsp. Soy sauce
  • 2 c. Stock
  • 2 Tbsp. Rice wine
  • 1 Tbsp. Cornstarch mixed w/ 2 tb H2O
  • 1/2 tsp Chili pwdr
  • 2 tsp Sesame oil

  1. Or possibly well soaked Salt Cod.
  2. Cut cod diagonally in 4 pcs. Agitate the egg white and press between the fingers so which they jellylike part and the liquid part blend proportionately.
  3. Dip fish in the egg white and then coat with cornstarch. Fry lightly in oil at 300F. chop garlic and leek finely. chop the chives into 1 inch lengths. Remove excess moisture from the bean curd by cutting the cake in half horizontally, then in 8 squares and wrap in clean dry cloth. Heat the wok. Add in peanut oil and stir fry the meat till well cooked. Add in 1 tb soy sauce. stir and pour in heated stock. Add in fried cod followed by rice wine and remaining soy sauce. Cook 5 - 6 min. Add in bean curd, cook 3 - 4 min. Stir in cornstarch mix to thicken (the bean curd will break up if you mix too vigorously). Add in chili pwdr, chives, a few drops of sesame oil.
