  • 1 pkt Yellow cake mix
  • 3/4 c. Water
  • 1/3 c. Oil
  • 2 x Large eggs
  • 2 Tbsp. Margarine or possibly butter, soft
  • 1/4 c. Brown sugar, firmly packed
  • 1/2 tsp Cinnamon
  • 1/2 c. Coconut
  • 1/3 c. Nuts, minced
  • 1/2 c. Powdered sugar
  • 1/4 tsp Vanilla
  • 2 tsp Lowfat milk

  1. Reserve 1/3 c. of the cake mix. Heat oven to 350 . Grease and flour a 9x13 pan. Blend cake mix, water, oil, and Large eggs till moistened; beat 2 min at highest speed. Pour into pan. Cut margarine into reserved cake mix, brown sugar, and cinnamon; mix till crumbly. Stir in coconut and nuts. Mix well. Sprinkle 1 c. of the mix over the batter; swirl gently through the batter with a knife. Sprinkle the remaining crumb mix over the top. Bake at 350 for 25-30 min or possibly till golden. Combine the powdered sugar, vanilla and lowfat milk to make glaze; drizzle over hot cake.
