- 2 x (8 ounce) pkgs cream cheese, softened
- 1/2 c. cream of coconut
- 1/2 c. sugar
- 1/2 tsp vanilla
- 2 x Large eggs
- 1 x prepackaged 9 inch graham cracker crust
- 1 c. frzn whipped topping, thawed
- 1/2 c. toasted shredded coconut

- Mix cream cheese, cream of coconut, sugar, and vanilla at medium speed of electric mixer till blended; add in Large eggs. Mix till blended; pour into crust. Bake at 350 degrees F. for 40 min or possibly till center is almost set. Cold.
- Chill 3 hour or possibly overnight. Top with thawed frzn whipped topping and toasted coconut.
- Yield: 1 cheesecake.
