One of my most top viewed and rated recipes on my blog is my mother's German Potato Salad. I can see why, because it's delicious-- and there's bacon in it! German potato salad is made with oil and vinegar. No mayonnaise, whatsoever. To add mayo to a classic German potato salad would be sacrilegious.
American potato salad, on the other hand, uses mayonnaise. I know some people who think mayonnaise is "gross". To each his own. I like it, but obviously, I don't eat it in massive quantities. Now that we're heading into warmer weather and BBQ Season, I was bitten with my yearly hankering for a homemade classic American potato salad.

,%20and%20a%20little%20bit%20of%20chopped%20dill%20pickle.%20%20I%20love%20to%20add%20black%20olives%20(which%20my%20son%20despises%20and%20says%20ruins%20the%20whole%20thing).%20%20On%20occasion,%20I've%20been%20known%20to%20add%20thinly%20sliced%20red%20radish,%20for%20some%20crunchy%20texture.%20Or%20not.%3C/p%3E%3Cp%3ERecently,%20I've%20been%20featuring%20recipes%20I've%20made%20with%20my%20beloved%20pressure%20cooker.%3C/p%3E%3Cp%3EI%20will%20be%20sharing%20how%20I%20made%20a%20pressure%20cooker%20cheese%20cake%20in%2012%20minutes--%20(now,%20on%20the%20blog(!%20This%20was%20so%20creamy%20and%20delicious,%20and%20so%20easy%20to%20make!%3C/p%3E%3Cp%3EI%20know%20that%20not%20all%20of%20my%20readers%20own%20a%20pressure%20cooker--%20or,%20you've%20admitted%20that%20yours%20has%20been%20banished%20to%20your%20garage,%20gathering%20dust.%20%20I%20am%20working%20on%20a%20post%20to%20share%20my%20suggestions/recommendations%20on%20how%20to%20choose%20a%20pressure%20cooker%20and%20why%20I%20think%20they're%20so%20wonderful%20to%20use.%20You%20can%20still%20make%20this%20without%20a%20pressure%20cooker--%20however%20it%20will%20take%20an%20additional%2030-45%20minutes!%3C/p%3E%3Cp%3EI've%20never%20posted%20my%20American%20potato%20salad%20recipe,%20because%20I%20don't%20measure%20when%20I%20make%20it.%20Today%20I'm%20going%20to%20share%20my%20recipe,%20but%20I%20have%20to%20give%20credit%20to%20Barbara%20of%20%22Pressure%20Cooking%20Today%22%20for%20sharing%20her%20genius%20way%20of%20making%20using%20a%20pressure%20cooker%20to%20speed%20up%20the%20process%20of%20preparing%20the%20potatoes%20and%20eggs.%20%20%20This%20was%20so%20fast%20and%20easy%20that%20I%20could%20just%20hug%20her!%3C/p%3E%3Cp%3EThe%20stove%20top%20technique%20to%20making%20a%20potato%20salad%20beings%20with%20peeling%20potatoes,%20cubing%20them%20and%20boiling%20them%20in%20salted%20water%20for%2015-20%20minutes,%20until%20fork%20tender.%20%20Eggs%20are%20also%20brought%20to%20a%20boil,%20the%20heat%20turned%20off%20and%20pot%20covered%20and%20allowed%20to%20sit%2015-20%20minutes.%20%20With%20a%20pressure%20cooker,%20both%20the%20potatoes%20and%20eggs%20are%20cooked%20for%20four%20minutes!%20Yes,%20FOUR%20minutes!%20Ta-da!%20%20My%20electric%20pressure%20cooker%20comes%20with%20a%20trivet%20and%20steamer%20basket.%201-1/2%20cups%20water%20is%20added,%20the%20lid%20locked%20on.%20I%20pressed%204%20minutes%20and%20while%20the%20spuds%20and%20eggs%20were%20cooking,%20I%20prepared%20%20a%20%20bowl%20of%20ice%20water.%3C/p%3E%3Cp%3EOnce%20the%20pressure%20cooker%20beeped,%20I%20removed%20the%20eggs%20and%20plunged%20them%20into%20the%20cold%20water.%20I%20checked%20that%20the%20potatoes%20were%20tender%20(they%20were)%20and%20then%20carefully%20removed%20the%20steamer%20basket%20of%20potatoes.%3C/p%3E%3Cp%3ENOTE:%20I%20use%20my%20pressure%20cooker%20to%20%22steam%22%20the%20potatoes%20for%20making%20creamy%20mashed%20potatoes.%20Four%20minutes!%20%20I%20used%20Russet%20potatoes%20for%20this%20salad,%20because%20it's%20most%20traditional.%20%20Red%20Bliss,%20Yukon%20Gold%20or%20even%20Fingerlings%20potatoes%20would%20work,%20too.%3C/p%3E%3Cp%3EI%20noticed%20a%20coating%20of%20starch%20on%20the%20cooked%20potatoes.%20I%20made%20a%20split%20decision%20that%20I%20should%20rinse%20them%20with%20cold%20water,%20to%20remove%20the%20sticky%20residue.%20I%20also%20figured%20this%20would%20cool%20down%20the%20potatoes%20faster%20as%20well.%20I%20didn't%20want%20to%20add%20hot/warm%20potatoes%20to%20mayonnaise,%20thinking%20it%20might%20melt%20the%20mayo.%3C/p%3E%3Cp%3EWhile%20I%20left%20the%20potatoes%20to%20drain%20well,%20and%20for%20the%20eggs%20to%20cool%20down,%20I%20started%20with%20the%20salad%20dressing:%3C/p%3E%3Cp%3EI've%20sliced%20about%20six%20green%20onions.%20Starting%20with%20about%20one%20cup%20mayonnaise,%20I%20add%20yellow%20mustard,%20chopped%20dill%20pickle%20(this%20is%20totally%20optional),%20white%20wine%20vinegar%20(or%20you%20can%20replace%20with%20pickle%20juice),%20salt%20and%20pepper%20...%3C/p%3E%3Cp%3ELast,%20I%20stirred%20in%20the%20green%20onion,%20and%20tasted%20the%20dressing.%20%20I%20added%20about%20one%20teaspoon%20of%20white%20sugar%20to%20counterbalance%20to%20flavor%20from%20the%20dill%20pickle.%20%20%20Bingo.%3C/p%3E%3Cp%3EPressure%20cooking%20hard-boiled%20eggs%20has%20become%20my%20fool-proof%20method.%20%20I've%20learned%20that%20cracking%20the%20cooked%20(and%20cooled)%20eggs%20and%20removing%20them%20with%20cool%20faucet%20water%20yields%20perfectly%20peeled%20eggs.%20Yes!%3C/p%3E%3Cp%3ESee?%20%20They%20are%20perfectly%20cooked%20in%20four%20minutes!%3C/p%3E%3Cp%3ETo%20me,%20egg%20slicers%20are%20one%20of%20the%20greatest%20kitchen%20inventions.%20They%20make%20chopping%20eggs%20simple%20and%20unfussy%20to%20do.%20I%20set%20one%20peeled%20egg%20aside,%20for%20a%20garnish.%20%20For%20the%20assembly:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20I%20add%20the%20cooled%20potatoes%20and%20eggs.%20I%20recommend%20adding%20about%20half%20of%20the%20dressing%20and%20giving%20the%20salad%20a%20gentle%20tossing%20to%20coat%20evenly.%20%20Add%20more%20dressing%20until%20the%20salad%20is%20the%20way%20you%20like%20it.%20I%20like%20to%20make%20mine%20just%20a%20tad%20past%20the%20%22dry%22%20point.%20%20I%20don't%20want%20a%20potato%20salad%20where%20the%20potatoes%20are%20floating%20in%20the%20dressing--%20yuk!%3C/p%3E%3Cp%3EFrom%20start%20to%20finish%20this%20salad%20took%20less%20than%20one%20hour%20to%20make!%20%20I%20will%20never%20boil%20my%20potatoes%20or%20eggs%20again.%20My%20pressure%20cooker%20has,%20once%20again,%20made%20this%20arduous%20task%20a%20very%20simple%20one%20to%20do.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Chill%20the%20salad%20for%20at%20least%20an%20hour.%20In%20truth,%20I%20like%20the%20way%20this%20taste%20the%20following%20day,%20because%20the%20green%20onion%20has%20had%20a%20chance%20to%20give%20a%20great%20flavor%20to%20the%20salad.%20%20%20I%20give%20the%20salad%20a%20gentle%20stir,%20taste%20again%20for%20seasonings%20and%20adjust%20if%20necessary.%3C/p%3E%3Cp%3EWhen%20serving%20this%20salad%20in%20the%20outdoors,%20remember%20to%20keep%20it%20well-chilled.%20We%20don't%20anyone%20getting%20sick%20from%20contaminated%20mayonnaise--%20which%20is%20made%20from%20raw%20eggs!%3C/p%3E){kind=link}
