  • 1/2 c. cubed peeled potato
  • 1/4 c. minced onion
  • 1/8 tsp salt Healthy pinch pepper
  • 1/2 c. water
  • 1 can (6 1/2 ounces) minced clams, liquid removed
  • 2/3 c. lowfat milk
  • 1 Tbsp. butter or possibly margarine
  • 1 x bacon strip, cooked and crumbled Minced parsley, optional

  1. In a small saucepan, cook potato, onion, salt and pepper in water till vegetables are tender (don't drain). Add in clams, lowfat milk, butter and bacon; heat through (don't boil)/ Sprinkle with parsley if you like.
  2. Yield: 1 serving
