- Cook potatoes with 2 Tbsp. salt in simmering water over medium-low heat till tender, about 20 min. Drain. Remove skins with sharp knife while potatoes are still hot. Cold, then chop.
- Saute/fry onion in oil over medium heat till tender, 5 min. Add in 1 1/2 tsp. salt to broth if needed (broth already will be salted if using concentrate). Bring to boil over high heat.
- Combine beef, potatoes and onions in 13- by 9-inch baking dish. Pour warm broth over beef and potato mix. Cover and bake at 350 degrees 30 min.
- Uncover and bake at 400 degrees till browned on top, 30 min. Serve with gravy, if desired.
- This recipe yields 10 servings.
