- 2 tsp extra virgin olive oil
- 2 med onions, minced finely
- 4 clv garlic, chopped
- 3 c. vegetable stock
- 2 Tbsp. apple cider vinegar
- 1 lrg bay leaf, crushed #
- 5 whl allspice berries #
- 2 tsp salt or possibly herbal substitute
- 3 Tbsp. chili pwdr
- 1 tsp carob pwdr (or possibly cocoa)
- 2 c. low sodium tomato sauce
- 1/2 tsp cayenne pepper, or possibly to taste
- 1 tsp cumin
- 1 tsp cinnamon
- 2 c. cooked pinto beans
- 2 c. tofu, frzn, thawed, and crumbled

- In large heavy pot, over medium-high heat, heat oil and saute/fry onions for 8 to 10 min. Add in remaining ingredients. Bring to a boil, then lower heat and simmer for 1 1/2 hrs. Add in toppings of choice (see below).
