%20and%20cupcakes%20(tiramisu).%20She%20even%20has%20some%20vegan%20and%20gluten%20free%20dishes.%20There%20are%20also%20healthy%20dishes%20like%20gazpacho,%20low%20sugar%20jam,%20and%20creamy%20cream-less%20soups.%20And%20for%20the%20ladies%20a%20few%20pictures%20of%20Hans%20with%20his%20shirt%20off%20%E2%80%93%20yay%20says%20Lucie!%20Nadia%20knows%20what%20her%20audience%20wants!%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20a%20fan%20of%20the%20show%20or%20just%20like%20great%20%20food%20pictures%20and%20cool%20recipes,%20check%20out%20Cookin%E2%80%99%20for%20Trouble.%20It%20would%20make%20a%20great%20holiday%20gift%20for%20the%20foodie%20on%20your%20gift%20giving%20list.%3C/p%3E%3Cp%3ENadia%20G%E2%80%99s%20Christmas%20roast%20beef%3C/p%3E%3Cp%3ENadia%E2%80%99s%20roast%20beef%20dish%20is%20called%20Midnight%20Prime%20Roast%20Beef%20in%20her%20Feast%20of%20the%20Seven%20Dishes%20show%20airing%20this%20month.%20(See%20the%20video%20below.)%20However,%20in%20Cookin%E2%80%99%20for%20Trouble,%20it%E2%80%99s%20called%20Rockin%E2%80%99%20Roast%20Beef%20with%20a%20boneless%20beef%20rump%20roast.%20The%20recipes%20are%20slightly%20different,%20but%20either%20way,%20it%E2%80%99s%20a%20classic%20Christmas%20dinner%20roast%20beef%20dish.%3C/p%3E%3Cp%3EMy%20first%20attempt%20at%20this%20dish%20was%20with%20a%20rather%20small%20%E2%80%93%20and%20lean%20-%20beef%20tip%20roast.%20It%20was%20given%20to%20me%20by%20my%20mother-in-law%20and%20had%20been%20sitting%20in%20the%20freezer%20for%20awhile%20begging%20to%20be%20cooked.%20I%20kept%20my%20fingers%20crossed%20that%20it%20would%20work.%20I%20followed%20Nadia%E2%80%99s%20directions,%20but%20cut%20down%20the%20amount%20of%20time%20and%20kept%20an%20eye%20on%20the%20meat%20thermometer.%20Even%20so,%20it%20was%20slightly%20overcooked%20while%20the%20potatoes%20were%20undercooked%20and%20needed%20to%20be%20microwaved%20before%20serving.%20Shoot!%3C/p%3E%3Cp%3EWhen%20I%20make%20this%20again%20%E2%80%93%20and%20I%20will%20%E2%80%93%20I%E2%80%99ll%20use%20a%20real%20prime%20rib%20beef%20roast%20with%20a%20nice%20layer%20of%20juicy%20fat%20since%20the%20beef%20tip%20roast%20was%20delicious,%20but%20not%20as%20tender%20and%20juicy%20as%20I%20hoped.%20Also,%20I%20recommend%20doubling%20(at%20least)%20the%20amount%20of%20mushrooms%20as%20they%20smelled%20heavenly%20and%20tasted%20just%20as%20good.%20I%20used%20small%20red%20and%20purple%20potatoes,%20but%20fingerling%20potatoes%20would%20work%20very%20well,%20too.%20I%20also%20had%20trouble%20finding%20pearl%20onions,%20so%20I%20used%20regular%20onions%20cut%20into%20quarters.%3C/p%3E%3Cp%3EYou%20can%20serve%20this%20with%20the%20pan%20juices%20thinned%20with%20some%20beef%20broth%20for%20au%20jus.%20In%20Cookin%E2%80%99%20for%20Trouble,%20Nadia%20gave%20recipes%20for%20a%20teriyaki%20sauce%20and%20a%20chipotle%20mayo%20as%20dipping%20sauces.%20I%20tried%20the%20spicy%20chipotle%20mayo%20sauce,%20which%20was%20a%20wonderful%20change%20from%20the%20more%20traditional%20prepared%20horseradish.%20The%20recipe%20is%20below,%20too.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20roasting%20pan,%20place%20the%20beef%20fat%20side%20up%20and%20rub%20it%20with%20the%20ground%20mustard,%20black%20pepper,%20and%20sea%20salt.%3C/p%3E%3Cp%3ELet%20it%20stand%20at%20room%20temperature%20for%202%20hours.%20(This%20is%20really%20important%20to%20do%20so%20you%20get%20that%20pink%20color%20in%20the%20middle%20of%20your%20roast.)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20475%20degrees%20F%20and%20brown%20for%20roast%20for%20about%2015%20minutes.%20Then%20lower%20the%20oven%20temperature%20to%20325%20degrees%20F.%3C/p%3E%3Cp%3EWhen%20the%20roast%20begins%20to%20drip%20its%20juices%20%E2%80%93%20about%2030%20to%2060%20minutes%20%E2%80%93%20add%20the%20potatoes,%20onions%20and%20mushrooms%20to%20the%20roasting%20pan.%3C/p%3E%3Cp%3EContinue%20to%20cook%20until%20a%20meat%20thermometer%20inserted%20into%20the%20thickest%20part%20of%20the%20beef%20registers%20135%20degrees%20F.%3C/p%3E%3Cp%3ETransfer%20to%20a%20cutting%20board%20to%20rest%20for%20about%2015%20minutes.%3C/p%3E%3Cp%3ESlice%20the%20beef%20thinly,%20and%20serve%20on%20a%20large%20platter%20with%20the%20roasted%20onions,%20mushrooms%20and%20potatoes.%3C/p%3E%3Cp%3EChipotle%20Mayo%3C/p%3E%3Cp%3ERecipe%20courtesy%20of%20Nadia%20G%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20cup%20prepared%20mayonnaise%3C/p%3E%3Cp%3E6%20chipotle%20peppers%20in%20adobo%20sauce%3C/p%3E%3Cp%3E1/4%20teaspoon%20sea%20salt%3C/p%3E%3Cp%3Eground%20black%20pepper%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20blend%20together%20the%20mayonnaise,%20chipotle%20peppers,%20sea%20salt%20and%20black%20pepper%20to%20taste.%3C/p%3E%3Cp%3EKeep%20chilled%20until%20ready%20to%20serve.%3C/p%3E%3Cp%3EThis%20is%20my%20entry%20for%20the%20Zanussi%20Cookers%20make%20every%20meal%20a%20masterpiece%20competition.%3C/p%3E%3Cp%3EFeatured%20at:%3C/p%3E%3Cp%3E_________________%3C/p%3E%3Cp%3EDisclosure:%20I%20received%20a%20review
