%3C/p%3E%3Cp%3ELast%20night%20I%20made%20a%20chocolate%20dough%20for%20chocolate%20candy%20cane%20cookies.%20%20I%20saw%20this%20cookie%20come%20up%20one%20day%20in%20my%20FB%20news%20feed%20and%20automatically%20bookmarked%20it%20and%20added%20it%20to%20my%20Christmas%20cookie%20list.%20%20This%20is%20a%20completely%20new%20cookie%20I'm%20trying%20out%20this%20year,%20but%20as%20someone%20who%20doesn't%20always%20follow%20the%20rules%20instead%20of%20using%20regular%20cocoa%20powder%20in%20the%20dough%20I%20decided%20to%20throw%20caution%20to%20the%20wind%20and%20use%20the%20Hershey's%20Special%20Dark%20cocoa%20powder%20and%20see%20how%20it%20comes%20out.%20I'm%20sure%20the%20filling%20for%20these%20cookies%20is%20going%20to%20be%20super%20sweet%20so%20with%20the%20dark%20chocolate..%20Mmmmm.%20%20The%20dough%20is%20dark..%20black%20as%20coal%20and%20I%20can't%20wait%20to%20get%20these%20cookies%20in%20the%20oven%20tonight%20and%20see%20how%20they%20taste!!%3C/p%3E%3Cp%3EThis%20dough%20came%20together%20really%20quick,%20I%20was%20done%20in%20less%20than%2015%20minutes,%20put%20the%20ball%20of%20dough%20into%20a%20Ziplock%20bag%20and%20put%20it%20in%20the%20fridge%20with%20the%20rest%20of%20the%20Christmas%20cookie%20dough%20balls%20that%20are%20chilling.%3C/p%3E%3Cp%3ECookies%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFor%20cookies:%3C/p%3E%3Cp%3EWhisk%20flour,%20cocoa,%20and%20salt%20in%20medium%20bowl%20to%20blend.%20Using%20electric%20mixer,%20beat%20sugar%20and%20butter%20in%20large%20bowl%20until%20well%20blended.%20Beat%20in%20egg.%20Add%20dry%20ingredients;%20beat%20until%20blended.%20Refrigerate%20dough%201%20hour.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20Line%202%20baking%20sheets%20with%20parchment%20paper.%20Scoop%20out%20dough%20by%20level%20tablespoonfuls,%20then%20roll%20into%20smooth%20balls.%20Place%20balls%20on%20prepared%20baking%20sheets,%20spacing%20about%202%20inches%20apart.%20Using%20bottom%20of%20glass%20or%20hands,%20flatten%20each%20ball%20to%202-inch%20round%20(edges%20will%20crack).%20Bake%20until%20cookies%20no%20longer%20look%20wet%20and%20small%20indentation%20appears%20when%20tops%20of%20cookies%20are%20lightly%20touched%20with%20fingers,%20about%2011%20minutes%20(do%20not%20overbake%20or%20cookies%20will%20become%20too%20crisp).%20Cool%20on%20sheet%205%20minutes.%20Transfer%20chocolate%20cookies%20to%20racks%20and%20cool%20completely.%3C/p%3E%3Cp%3EFor%20filling:%3C/p%3E%3Cp%3EUsing%20electric%20mixer,%20beat%20powdered%20sugar%20and%20butter%20in%20medium%20bowl%20until%20well%20blended.%20Add%20peppermint%20extract%20and%202%20drops%20food%20coloring.%20Beat%20until%20light%20pink%20and%20well%20blended,%20adding%20more%20food%20coloring%20by%20dropfuls%20if%20darker%20pink%20color%20is%20desired.%20Spread%202%20generous%20teaspoons%20filling%20evenly%20over%20flat%20side%20of%201%20cookie%20to%20edges;%20top%20with%20another%20cookie,%20flat%20side%20down,%20pressing%20gently%20to%20adhere.%20Repeat%20with%20remaining%20cookies%20and%20peppermint%20filling.%3C/p%3E%3Cp%3EPlace%20crushed%20candy%20canes%20on%20plate.%20Roll%20edges%20of%20cookie%20sandwiches%20in%20crushed%20candies%20(candies%20will%20adhere%20to%20filling).%20(Cookie%20sandwiches%20can%20be%20made%20ahead.%20Store%20in%20single%20layer%20in%20airtight%20container%20at%20room%20temperature%20up%20to%203%20days%20or%20freeze%20up%20to%202%20weeks.)%3C/p%3E){kind=link}
