%20with%20coffee%20and%20cordials%20completes%20the%20meal.%3C/p%3E%3Cp%3EThen%20there%20are%20the%20gifts!%20The%20first%20year,%20artsy%20Paula%20decorated%20a%20simple%20wooden%20candle%20with%20ribbon%20and%20placed%20a%20red%20stick%20candle%20in%20the%20center..each%20female%20received%20one%20at%20her%20place%20setting.%20And%20so%20another%20tradition%20was%20born.%20Each%20woman%20buys%206%20similar%20gifts,%20wraps%20it%20prettily%20and%20places%20it%20on%20the%20table.%20What%20fun%20to%20open%20each%20present%20amidst%20oohs%20and%20ahhhs%20without%20a%20child%20needing%20attention,%20a%20phone%20to%20be%20answered,%20a%20problem%20to%20be%20solved...no%20children,%20no%20husbands,%20just%20the%20gals.%20The%20atmosphere%20is%20always%20perfect...Christmas%20music%20in%20the%20background,%20wine%20sparkling%20in%20crystal%20goblets,%20candles%20glowing,%20laughter,%20chatter%20and%20a%20tear%20or%20two%20as%20we%20reminisce.%3C/p%3E%3Cp%3EStruffoli%20made%20in%20Florida%20shown%20via%20Skype%EF%BB%BF%EF%BB%BF%EF%BB%BF%EF%BB%BF%EF%BB%BFLadies%20Night%20changed%20over%20the%20years,%20four%3C/p%3E%3Cp%3Esisters%20(Terry,%20Judey,%20Joan,%20Kaz)%20and%20Mom%20moved%20to%20Florida.%20But%20the%20tradition%20continued.%20Judey%20hosts%20it%20in%20Florida%20with%20the%20same%20food,%20gifts%20on%20the%20table%20(mailed%20early),%20on%20the%20same%20day%20at%20the%20same%20time.%20Antipasto%20Platter%20similar%20to%20Ladies'%20Night%3C/p%3E%3Cp%3E(tuna%20&%20celery%20in%20center)%EF%BB%BF%3C/p%3E%3Cp%3ENow%20we%20Skype.%20Modern%20technology%20allows%20us%20to%20share%20the%20day%20as%20if%20we%20were%20in%20the%20same%20room.%20We%20blow%20kisses,%20wave,%20laugh%20and%20talk%20over%20each%20other%20just%20like%20we%20have%20always%20done.%20This%20makes%20it%20less%20lonely%20for%20the%20two%20New%20York%20sisters%20and%20we%20look%20forward%20to%20the%20day%20we%20can%20celebrate%20Ladies%20Night%20together%20and%20make%20more%20memories%20that%20will%20fill%20our%20hearts%20to%20overflow.%3C/p%3E%3Cp%3EThis%20year,%20Paula%20and%20I%20took%20a%20break%20and%20attended%205%20PM%20Mass,%20then%20went%20back%20to%20her%20house%20for%20dessert%20and%20coffee.%20The%20Sunday%20forecast%20was%20for%20drenching%20rain,%20a%20perfect%20day%20to%20stay%20in%20and%20make%20my%20Christmas%20candy.%20It's%20an%20all%20day%20affair%20and%20then%20some.%20I%20try%20something%20different%20each%20year,%20but%20there's%20always....my%20fudge.%20Silky%20not%20too%20sweet%20chocolate...raspberry%20and%20pistachio,%20orange%20and%20walnut,%20Mexican%20fudge%20with%20a%20hint%20of%20cinnamon%20and%20cayenne%20pepper,%20white%20chocolate%20(the%20real%20deal)%20with%20cranberries%20and%20peppermint%20flavoring,%20and%20my%20husband's%20favorite%20fudge-packed%20with%20mini-marshmallows.%20Brittle%20gives%20me%20the%20shivers,%20but%20there's%20nothing%20like%20its%20buttery%20taste....I%20skip%20the%20peanuts%20and%20go%20with%20pecans%20or%20pistachio.%20Brittle%20isn't%20difficult%20to%20make,%20but%20the%20hot%20bubbling%20sugar%20mixture%20needs%20undivided%20attention.%20Things%20can%20get%20very%20messy%20and%20a%20careful%20eye%20is%20needed%20not%20to%20burn%20the%20nuts.Nothing%20is%20easier%20than%20chocolate%20bark%20flavored%20with%20banana,%20lemon,%20rum%20or%20sprinkled%20with%20coconut.%20One%20year,%20I%20was%20on%20a%20three%20chocolate%20covered%20marshmallows%20on%20a%20stick%20kick,%20another%20year-chocolate%20covered%20pretzels%20and%20this%20year....chocolate%20covered%20coconut%20balls%20topped%20with%20slivers%20of%20almonds.%3C/p%3E%3Cp%3EPresents!I%20consider%20myself%20a%20%22cook%22%20rather%20than%20a%20baker%20or%20candy%20maker.%20But%20Christmas%20isn't%20Christmas%20without%20platters%20of%20traditional%20cookies,%20mini-paper%20cups%20of%20fudge,%20stacks%20of%20brittle%20and%20other%20sweet%20confections.%20I%20stop%20what%20I'm%20doing%20at%203%20PM,%20which%20is%20considered%20the%20%22Holy%20Hour%22,%20and%20say%20my%20rosary,%20the%20chaplet%20of%20the%20Divine%20Mercy%20and%20read%20an%20Advent%20reflection.%20It%20is%20a%20time%20to%20pause%20and%20remember%20what%20the%20Reason%20for%20the%20Season%20is....the%20Birth%20of%20Jesus.%20I%20count%20my%20blessings%20and%20wonder%20what%20new%20ones%20Abba%20will%20give%20me%20in%20the%20year%20ahead.%20I%20pray%20for%20all%20those%20I%20love%20and%20that%20no%20one%20will%20be%20missing%20from%20our%20Ladies%20Night%20tables%20next%20year.%20I%20ponder%20the%20gifts%20the%20Magi%20brought%20to%20the%20New%20Born%20King....and%20I%20see%20myself%20among%20the%20shepherds,%20the%20Blessed%20Mother%20&%20St.%20Joseph,%20humbled%20to%20be%20in%20the%20presence%20of%20the%20Holy%20Babe%20and%20bearing%20my%20gift....Christmas%20Candy%20For%20The%20Christ%20Child.%3C/p%3E%3Cp%3EPrepare%20a%20baking%20sheet%20with%20wax%20paper%20or%20release%20foil.%20Mix%20coconut,%20sugar,%20butter%20and%20corn%20syrup%20with%20a%20standing%20or%20hand%20mixer.%20Pinch%20off%20a%20good%20size%20piece%20and%20roll%20into%20a%20ball.%20Place%20on%20baking%20sheet.%20Freeze%20for%2015%20minutes.%3C/p%3E%3Cp%3EIn%20a%20double%20boiler,%20melt%20about%203/4%20of%20the%20chopped%20chocolate.%20Stir%20until%20chocolate%20is%20smooth.%20Remove%20insert%20and%20add%20the%20remaining%20chocolate,%20stirring%20until%20all%20is%20melted.%20Be%20careful%20not%20to%20get%20any%20drops%20of%20water%20in%20the%20chocolate%20or%20it%20can%20seize.%3C/p%3E%3Cp%3EWorking%20with%20a%20fork,%20drop%20one%20coconut%20ball%20into%20the%20chocolate,%20shake%20off%20excess%20and%20place%20on%20prepared%20pan.%20Place%20a%20few%20almond%20slivers%20on%20top.%20Continue%20until%20all%20the%20coconut%20balls%20are%20coated.%20Let%20sit%20until%20chocolate%20is%20set.%20Makes%20about%202%20dozen%3C/p%3E%3Cp%3ERemember%20To%20Make%20Memories%20At%20The%20Table.%3C/p%3E%3Cp%3EMerry%20Christmas%20%20%20%20%20Buon%20Natale%3C/p%3E){kind=link}
