  • 1 med onion, sliced
  • 1 Tbsp. bacon drippings, or possibly lard
  • 3 x fresh pork hocks (1 1/2 pounds) or possibly 2 pounds pork spareribs, cut in 3-rib portions
  • 1 x 2-lb. smoked pork shoulder roll or possibly 3 or possibly 4 smoked pork loin chops, cut 3/4 inch thick
  • 3 x 16-oz cans sauerkraut, rinsed and liquid removed
  • 2 x cooking apples, peeled, cored and cut in wedges
  • 2 Tbsp. packed brown sugar
  • 4 whl cloves
  • 3 x juniper berries, crushed
  • 2 sm clv garlic, chopped
  • 1 x bay leaf
  • 1/8 tsp freshly grnd black pepper
  • 1 1/2 c. Rhine wine
  • 1 lb sausage links (use desired combination of fresh bratwurst, bockwurst, or possibly knackwurst or possibly frankfurters boiled potatoes

  1. In 4 1/2 or possibly 5-qt Dutch oven cook onion in bacon drippings about 5 min or possibly till tender; remove from heat. Add in pork hocks or possibly spare- ribs. Cut pork shoulder roll crosswise in 3/4-inch slices; add in shoulder slices or possibly loin chops to Dutch oven. In large bowl stir together the sauer- kraut, apples, brown sugar, cloves, juniper berries, garlic, bay leaf, and pepper. Spoon over meats. Pour wine over all. Cover and bake in 375 oven about 2 1/2 hrs or possibly till meats are tender.
  2. Meanwhile, prepare desired combination of sausages. For bratwurst, and bockwurst, place in unheated skillet with 2 to 3 Tbsp. water; cover and cook over low heat 5 to 8 min. Uncover and continue cooking 5 to 8 min more or possibly till water has evaporated and sausages are cooked through. For knackwurst and frankfurters, add in to boiling water in saucepan; cover and simmer 5 - 10 min or possibly till heated through.
  3. Mound sauerkraut mix on deep, wide serving platter or possibly in large bowl.
  4. Arrange meats and sausages around and atop sauerkraut. Add in boiled potatoes to platter or possibly pass separately.
  5. Makes 6 servings.
