  • 2 Tbsp. extra virgin olive oil
  • 3/4 lb onions minced
  • 2 lrg garlic cloves chopped
  • 1/2 lb mushrooms quartered
  • 2 tsp paprika
  • 1 pch cayenne pepper
  • 2 med tomatoes peeled, seeded, minced
  • 1 lrg green bell pepper diced
  • 3 c. canned low-salt chicken broth
  • 1/2 c. dry white wine
  • 5 ounce Spanish chorizo or possibly other garlic sausage (such as kielbasa), cutinto 1/2-inch-thick rounds
  • 3/4 lb fideo or possibly angel hair pasta Chopped fresh parsley

Инструкции

  1. Preheat oven to 400F. Heat extra virgin olive oil in heavy deep paella pan skillet over medium-high heat. Add in onions and garlic and cook till tender, stirring frequently, about 8 min. Add in mushrooms and saute/fry 4 min.
  2. Add in paprika and cayenne and stir just till fragrant, about 30 seconds.
  3. Add in tomatoes and green pepper and saute/fry 2 min. Add in chicken broth, wine, chorizo. Bring mix to simmer. Break pasta in half and add in to pan. Cook till pasta is tender, stirring occasionally, about 8 min.
  4. Set pan in oven and bake till all liquid is absorbed and pasta is crusty,
  5. about 25 min. Sprinkle with parsley.
  6. Serves 4.
