- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup sugar
- 1/4 cup Almond Milk
- 1/2 cup baking cocoa
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup shredded peeled zucchini
- FILLING:
- 1 (8 ounce) package cream cheese, softened
- 6T cup butter or margarine, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1-2 pinches cayenne pepper - optional (don't go overboard!)
- 1 cup confectioners' sugar
- Additonal confectioners' sugar

%20when%20I%20was%20going%20to%20bring%20them%20in%20muffins%20or%20cake.%20%20I%20love%20Carina's%20subtle%20way....%22the%20baby%20would%20really%20like%20some%20blueberry%20muffins%22.%20%20Grumpy%20on%20the%20other%20hand,%20when%20he%20finds%20out%20I%20might%20%22make%22%20something,%20tells%20me%20that%20I%20need%20to%20tell%20them%20they%20are%20SOL%20because%20HE%20is%20taking%20the%20goodies%20to%20HIS%20work.%20%20ha%20ha.%20%20Well,%20being%20the%20fair%20mom%20%20that%20I%20am,%20I%20make%20him%20share.%20%20This%20time%20it%20was%20my%20turn%20to%20take%20something%20to%20work.%20%20My%20supervisor%20was%20not%20so%20subtly%20hinting%20that%20I%20was%20supposed%20to%20be%20bringing%20a%20baked%20treat%20in.%20%20%20I%20decided%20that%20if%20I%20woke%20up%20early%20enough%20the%20next%20morning,%20I%20would%20be%20nice%20and%20treat%20my%20co-workers%20to%20cake.%20%20However,%20when%20they%20ask%20for%20treats,%20what%20they%20didn't%20always%20know%20was%20that%20they%20are%20also%20asking%20to%20be%20my%20guinea%20pigs!%20%20It%20is%20very%20rare,%20as%20you%20do%20know%20if%20you%20are%20a%20regular%20reader%20here,%20that%20I%20make%20anything%20according%20to%20the%20way%20it%20should%20be%20and%20I%20love%20to%20experiment!%20%20I%20decided%20to%20subtly%20test%20my%20co-workers%20out%20and%20see%20if%20they%20could%20figure%20out%20what%20the%20secret%20ingredient%20was%20in%20the%20cream%20of%20this%20cake.%20%20One%20guessed%20nutmeg%20(no).%20%20Another%20made%20me%20giggle%20when%20she%20suggested%20I%20mixed%20vanilla%20frosting%20and%20sour%20cream%20together%20for%20the%20filling!%20%20(no%20again!)%20and%20yet%20another%20(JOE-yes,%20I'm%20saying%20your%20name%20on%20my%20blog!)%20wanted%20to%20know%20if%20he%20brought%20in%20his%20sweet%20&%20spicy%20sauce%20for%20grilling%20if%20I%20would%20blog%20about%20him...this%20was%20after%20he%20found%20out%20that%20there%20was%20cayenne%20in%20the%20filling%20and%20shared%20his%20passion%20for%20sweet%20heat%20with%20me!%20%20Of%20course,%20I%20said%20yes.%20%20lol%3C/p%3E%3Cp%3EThe%20secret%20ingredient%20was%20cayenne%20pepper%20in%20the%20filling%20and%20it%20was%20awesome!%3C/p%3E%3Cp%3EI%20wonder,%20when%20these%20goodies%20turn%20out%20so%20well%20and%20they%20all%20love%20them%20like%20they%20say%20they%20do,%20maybe%20I%20should%20start%20making%20commission%20on%20these%20%20office%20treats?%3C/p%3E%3Cp%3EChocolate%20Zucchini%20Roll%20with%20Spiced%20Cream%20Filling%3C/p%3E%3Cp%3E(or%20in%20other%20words%20-%20a%20glorified%20HOHO!)%3C/p%3E%3Cp%3ECake:%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20beat%20eggs%20and%20vanilla.%20Combine%20flour,%20sugar,%20cocoa,%20baking%20soda,%20cinnamon%20and%20salt;%20add%20to%20egg%20mixture%20alternately%20with%20milk%20and%20mix%20well.%20%20Stir%20in%20zucchini.%20Spread%20into%20a%20greased%20and%20waxed%20paper-lined%2015-in.%20x%2010-in.%20x%201-in.%20baking%20pan.%20Bake%20at%20350%20degrees%20F%20for%207-10%20minutes%20or%20until%20cake%20springs%20back%20when%20lightly%20touched.%3C/p%3E%3Cp%3ETurn%20onto%20a%20linen%20towel%20dusted%20with%20confectioners'%20sugar.%20Peel%20off%20waxed%20paper%20and%20roll%20up,%20jelly-roll%20style,%20starting%20with%20a%20short%20side.%20Cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20beat%20cream%20cheese,%20butter,%20vanilla,%20cinnamon%20and%20cayenne%20pepper%20until%20fluffy.%20Beat%20in%20confectioners'%20sugar.%20Unroll%20cake;%20spread%20filling%20to%20within%201%20in.%20of%20edges.%20Roll%20up%20again;%20dust%20with%20confectioners'%20sugar.%20Refrigerate%20until%20serving.%3C/p%3E){kind=link}
