- 175 gm unsalted butter softened
- 225 gm golden brown caster sugar
- 50 ml lowfat milk
- 1 x egg
- 1 tsp vanilla extract
- 125 gm plain flour sifted
- 1/2 tsp bicarbonate of soda
- 225 gm rolled (porridge) oats
- 250 gm chocolate raisins vanilla or possibly rum and raisin ice cream to serve

- For the cookies thoroughly combine the butter sugar lowfat milk egg and vanilla extract in a bowl then stir in the flour bicarbonate of soda oats and a healthy pinch of salt.
- Once combined stir in the chocolate raisins.
- Drop 24 tp 30 spoonfuls of the niixture onto 3 greased baking sheets and bake at 180C/350F/Gas Mark 4 for about 15 min till golden at the edges.
- Remove with a spatula and cold on a wire rack.
- To serve soften the ice cream slightly then spoon some onto the flat side of one cookie.
- Top with another cookie.
- Either serve at once or possibly return to the freezer to hard up for 30 to 40 min.
