- 1/4 tsp ginger
- 1/8 tsp allspice
- 1/8 tsp freshly ground nutmeg
- 1 cup non-fat buttermilk (we substitute almond milk to make it dairy free)
- 1 15-oz can pumpkin puree
- 3/4 cup dark brown sugar
- 1 large egg
- 1 egg white
- 1/4 cup avocado oil
- 1/4 cup corn syrup (I didn't have corn syrup and substituted maple syrup)
- 1 Tbs vanilla extract
- Glaze
- 1/2 cup powdered sugar
- 1 - 1 1/2 Tbs almond milk
- Spiced Glaze
- 1/2 cup powdered sugar
- about 1 Tbs almond milk
- 1/2 tsp cinnamon
- 1/8 tsp (generous) freshly ground nutmeg
- 1/8 tsp ginger
- teeny, tiny pinch cloves

%20season,%20and%20last%20year%20it%20made%20a%20special%20appearance%20at%20a%20fundraiser%20for%20Liv's%20high%20school%20dance%20team.%20%20While%20she's%20not%20on%20the%20team%20this%20year,%20we've%20still%20had%20a%20request%20to%20bring%20the%20cake%20for%20the%20fundraiser%20next%20weekend%20and%20the%20ingredients%20have%20been%20assembled.%3C/p%3E%3Cp%3EMoving%20into%20the%20holiday%20season%20I%20find%20far%20too%20many%20high%20calorie%20indulgences,%20and%20this%20beauty%20keeps%20me%20in%20line.%20%20I%20found%20the%20recipe%20years%20ago%20in%20an%20Eating%20Well%20Magazine,%20and%20while%20it's%20still%20%22cake%22,%20it's%20a%20lower%20fat%20version%20that%20includes%20a%20decent%20dose%20of%20pumpkin%20to%20up%20the%20vitamin%20content%20and%20make%20me%20feel%20not%20quite%20so%20guilty%20when%20I%20reach%20for%20slice%20number%20two.%3C/p%3E%3Cp%3EChocolaty%20enough%20for%20any%20chocoholic%20and%20doused%20in%20not%20one,%20but%20two%20sweet%20and%20spiced%20glazes,%20this%20cake%20goes%20a%20long%20way%20to%20serve%20a%20crowd.%20%20Sliced%20thinly%20we've%20been%20known%20to%20get%20nearly%2020%20pieces%20out%20of%20the%20cake,%20and%20it's%20so%20popular%20there%20usually%20aren't%20any%20leftovers%20for%20me%20to%20bring%20home.%3C/p%3E%3Cp%3EDecadent%20chocolate,%20enhanced%20with%20seasonal%20spices...%20this%20one%20has%20earned%20a%20top%20spot%20on%20our%20list%20of%20favorites.%3C/p%3E%3Cp%3EChocolate%20Pumpkin%20Cake%20with%20Spiced%20Glazes%3C/p%3E%3Cp%3EChocolaty%20and%20with%20a%20tender,%20moist%20crumb,%20this%20cake%20simply%20sings%20with%20the%20flavors%20of%20the%20holiday%20season.%20%20However,%20it's%20also%20fabulous%20at%20a%20summer%20picnic.%20%20Lower%20in%20fat%20than%20many%20dessert%20table%20indulgences,%20you%20won't%20feel%20guilty%20when%20you%20reach%20for%20slice%20number%20two.%3C/p%3E%3Cp%3EAdapted%20from%20Eating%20Well%20and%20Liv%20Life%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%BA%20and%20coat%20a%2012-cup%20bundt%20pan%20with%20cooking%20spray.%20%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20all-purpose%20flour,%20pastry%20flour%20(or%20spelt),%20granulates%20sugar,%20cocoa,%20baking%20powder%20and%20soda,%20spices%20and%20salt%20in%20a%20medium%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EPour%20the%20buttermilk%20(or%20almond%20milk)%20into%20a%20large%20bowl%20and%20add%20the%20pumpkin%20puree,%20and%20brown%20sugar.%20%20Mix%20with%20an%20electric%20mixer%20(or%20alternatively%20work%20with%20a%20whisk)%20on%20low%20speed%20until%20fully%20incorporated.%20%20Beat%20in%20the%20whole%20egg%20and%20egg%20white.%20%20Add%20the%20oil,%20corn%20syrup%20(or%20maple%20syrup)%20and%20vanilla%20and%20continue%20to%20mix%20or%20whisk%20until%20incorporated.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20and%20stir%20just%20until%20combined.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pan%20and%20then%20place%20into%20the%20oven.%3C/p%3E%3Cp%3EBake%20until%20a%20wooden%20skewer%20inserted%20into%20the%20center%20comes%20out%20with%20only%20a%20few%20moist%20crumbs%20attaches,%20about%201%20to%201%201/4%20hours.%20%20Remove%20from%20the%20oven%20and%20place%20the%20pan%20on%20a%20wire%20rack.%20%20Allow%20to%20cool%20for%2015%20minutes%20then%20remove%20the%20cake%20from%20the%20pan%20and%20allow%20to%20cool%20completely%20on%20the%20rack.%3C/p%3E%3Cp%3EGlaze:%20%20Combine%20the%20powdered%20sugar%20and%20milk%20in%20a%20small%20bowl.%20%20Whisk%20until%20completely%20smooth.%3C/p%3E%3Cp%3EPlace%20the%20cake%20on%20a%20serving%20plate%20or%20other%20board%20and%20drizzle%20glaze%20over%20the%20top%20of%20the%20cake.%3C/p%3E%3Cp%3ENext,%20combine%20the%20Spiced%20Glaze%20ingredients%20and%20again,%20whisk%20until%20smooth.%3C/p%3E%3Cp%3EDrizzle%20spiced%20glaze%20over%20the%20top%20of%20the%20cake%20and%20allow%20both%20glazes%20to%20set,%20about%201/2%20hour.%3C/p%3E%3Cp%3ESlice%20cake%20and%20serve.%3C/p%3E){kind=link}
