- Blend chocolate wafers to fine crumbs. In small saucepan over low heat, heat 1/2 c. butter. In 9 inch pie plate with fork, mix well the crumbs with butter. With hands, press in bottom and sides of pie plate. Bake at 375 degrees for 10 min. Cold crust completely on wire rack. Carefully spread coffee ice cream into crust. Freeze till hard for 1 1/2 hrs.
- In 2 qt saucepan over medium heat, cook cocoa, 2/3 c. sugar, 1/3 c. heavy cream, and 3 Tbsp. butter till smooth and boils. Remove from heat. Stir in 1 tsp. vanilla. Cold mix slightly; pour over coffee ice cream. Return pie to freezer; freeze till hard for 1 hour.
- To serve, in small bowl with mixer at medium speed, beat remaining heavy cream with 2 Tbsp. sugar and 1 tsp. vanilla till soft peaks form. With small metal spatula, spread whipped cream mix over pie. Soften chocolate squares with heat of hand and with vegetable peeler, make chocolate curls. Makes 8-10 servings.
