- 3 1/2 cups rolled oats
- 1/2 cup slivered almonds
- 1/4 cup diced dried apricots
- 1/4 cup raisins
- 1 tablespoon unsalted butter
- 1/4 teaspoon sea salt
- 2 tablespoons light brown sugar
- 1/3 cup pure maple syrup (I use light amber)
- 1/3 cup water
- 1 teaspoon pure vanilla extract
- 1/2 cup 60% dark chocolate chips

%3C/p%3E%3Cp%3EI%20did%20make%20a%20few%20changes,%20instead%20of%20currants,%20I%20went%20with%20dried%20apricots%20and%20raisins.%20%20There%20is%20just%20something%20about%20apricots%20and%20chocolate%20together%20that%20makes%20me%20happy!%20%20I%20also%20changed%20up%20my%20sweetener%20and%20went%20with%20dark%20chocolate%20instead%20of%20semi-sweet.%20%20I%20happen%20to%20be%20a%20pure%20maple%20syrup%20girl....and%20I%20subbed%20the%20syrup%20for%20the%20honey.%3C/p%3E%3Cp%3EChocolate%20Maple%20Granola%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20300%20F%20and%20have%20a%20large%20baking%20sheet%20covered%20with%20parchment%20paper%20ready.%3C/p%3E%3Cp%3EIn%20a%20small%20pot,%20combine%20the%20water,%20maple%20syrup,%20sugar,%20butter,%20salt%20and%20vanilla%20extract.%20Bring%20to%20a%20simmer%20and%20let%20cook%20until%20the%20sugar%20is%20dissolved.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20all%20the%20ingredients%20except%20for%20the%20chocolate%20and%20apricots.%20%20Pour%20the%20liquid%20over%20the%20dry%20ingredients%20and%20toss%20to%20combine.%3C/p%3E%3Cp%3ETransfer%20the%20granola%20mixture%20to%20the%20baking%20sheet%20and%20cook%20for%2045%20minutes,%20stirring%20often%20to%20make%20sure%20that%20the%20granola%20cooks%20evenly%20(if%20your%20granola%20is%20browning%20too%20quickly%20as%20mine%20did,%20lower%20your%20temp%20and%20watch%20carefully).%20%20Cool%20completely,%20add%20chocolate%20and%20apricot%20pieces.%20Deeba%20suggests%20to%20enjoy%20with%20plain%20yogurt%20or%20any%20type%20of%20milk%20of%20your%20choice%20-%20I%20have%20snacked%20on%20some%20right%20out%20of%20the%20container%20and%20enjoyed%20it%20in%20a%20parfait%20with%20some%20vanilla%20greek%20yogurt.%20%20This%20is%20a%20very%20yummy%20granola%20-%20slightly%20sweet%20and%20crunchy!%20%20Thank%20you%20Deeba!%3C/p%3E){kind=link}
