- 2 env unflavored gelatin
- 4 c. light cream or possibly half and half or possibly lowfat milk
- 3 x beaten Large eggs or possibly
- 3/4 c. liquid egg substitute
- 1 Tbsp. vanilla
- 1/2 c. unsweetened cocoa pwdr - European or possibly Dutch process
- 7 1/4 tsp Equal. for Recipes or possibly
- 24 pkt Equal. sweetener or possibly
- 1 c. Equal. Spoonful

- Equal. sweetener can be substituted with other sweetener products.
- In a medium saucepan combine the gelatin and 2 c. of the light cream; let stand 5 min. Cook and stir over medium heat until mix just comes to a boil. Gradually stir about 1 c. of the warm mix into Large eggs; return all to saucepan. Cook and stir for 2 min more. Don't boil. Remove from heat. Stir in the remaining cream and the vanilla. In a large bowl, combine cocoa pwdr and Equal.. Gradually blend in egg mix until smooth. Refrigeratejust until cool, stirring occasionally. (Do not overchill.)
- Freeze in a 4-qt ice cream maker according to manufacturer's directions.
- Yield: Makes about 1-3/4 qts (14 half-c.) servings.
