- Heat the chocolate with the cream in a heavy saucepan, and cook over very low heat till the mix is smooth and glossy. Transfer mix to a bowl, and chill till cooled but not too hard, 30 to 45 min. Using a handheld mixer, beat on high speed till thick and creamy.
