%3C/p%3E%3Cp%3EOh%20my,%20are%20these%20cookies%20ever%20good!%20I%20made%20them%20this%20past%20week%20end%20and%20my%20husband%20and%20I%20both%20couldn't%20stay%20out%20of%20them!%20I%20love%20oatmeal%20cookies%20any%20way,%20but%20these%20are%20the%20best%20I've%20ever%20eaten.%20Of%20course,%20coming%20from%20Cook's%20Illustrated,%20there%20were%20a%20lot%20of%20instructions%20to%20read%20through.%20They%20said%20to%20use%20chopped%20bittersweet%20chocolate,%20but%20when%20I%20went%20to%20the%20store,%20they%20were%20out.%20So%20I%20went%20with%20semi-sweet%20chocolate%20chips,%20which%20I%20had%20on%20hand.%20I%20used%20light%20brown%20sugar,%20instead%20of%20the%20recommenced%20dark%20brown,%20and%20dried%20cranberries%20instead%20of%20dried%20cherries.%20The%20toasted%20pecans%20really%20added%20wonderful%20flavor%20to%20these%20cookies.%20The%20original%20recipe%20is%20called%20%22Chocolate-Chunk%20Oatmeal%20Cookies%20with%20Pecans%20and%20Dried%20Cherries%22.%20I%20tried%20to%20follow%20their%20directions%20fairly%20close%20since%20this%20was%20the%20first%20time%20making%20these.%20I%20still%20managed%20to%20over%20bake%20the%20cookies%20a%20couple%20of%20minutes.%20I've%20checked%20my%20oven%20temp%20and%20it%20is%20correct,%20so%20I'm%20not%20sure%20why%20there%20was%20such%20a%20discrepancy%20in%20baking%20time.%20Maybe%20because%20I%20have%20an%20electric%20oven,%20but%20I%20really%20don't%20know.%20However,%20these%20cookies%20were%20still%20delicious,%20just%20a%20little%20more%20crisp%20than%20intended.%20Cook's%20has%202%20pans%20of%20cookies%20baking%20at%20the%20same%20time%20on%20upper%20and%20lower-middle%20oven%20racks,%20and%20then%20rotating%20them%20and%20switching%20racks.%20That%20was%20a%20fair%20amount%20of%20door%20opening%20during%20baking.%20These%20are%20huge%20cookies,%20using%201/4%20cup%20of%20dough%20for%20each%20yummy%20cookie.%20This%20recipe%20makes%2016%20humongous,%20delicious%20cookies,%20which,%20I%20have%20convinced%20myself,%20are%20really%20tasty%20for%20breakfast!%20Don't%20you%20agree?%20CHOCOLATE-CHIP%20OATMEAL%20COOKIES%20with%20PECANS%20and%20DRIED%20CRANBERRIES%3C/p%3E%3Cp%3E(adapted%20from%20Cook's%20Illustrated)%3C/p%3E%3Cp%3EINSTRUCTIONS%3C/p%3E%3Cp%3E1.%20Adjust%20oven%20racks%20to%20upper%20and%20lower-%20middle%20positions%20and%20preheat%20oven%20to%20350%20degrees.%20Line%20two%20large%2018x12%20inch%20baking%20sheets%20with%20parchment%20paper.%3C/p%3E%3Cp%3E2.%20Whisk%20flour,%20baking%20powder,%20sod%20and%20salt%20together%20in%20a%20bowl.%20In%20another%20bowl,mix%20the%20chopped%20pecans,%20cranberries,%20chocolate%20chips%20and%20oatmeal%20together.%3C/p%3E%3Cp%3E3.%20In%20a%20large%20bowl,%20beat%20butter%20and%20brown%20sugar%20together%20until%20creamy%20with%20a%20mixer.%20They%20used%20a%20stand%20mixer,%20but%20I%20had%20to%20use%20my%20hand%20mixer.%20Add%20egg%20and%20vanilla%20and%20beat%20on%20low%20speed%20until%20mixed%20well.%20With%20mixer%20on%20low%20speed,%20add%20flour%20mixture%20and%20mix%20until%20just%20combined.Then%20gradually%20add%20oat/nut%20mixture;%20mix%20just%20until%20incorporated.%20give%20dough%20a%20final%20stir%20with%20a%20spoon%20to%20make%20sure%20it%20is%20mixed%20well.%3C/p%3E%3Cp%3E4.%20Divide%20dough%20into%2016%20pieces,%20each%20about%201/4%20cup.%20Roll%20each%20piece%20into%20balls%20and%20place%208%20balls%20on%20each%20baking%20sheet%20about%202%201/2%20inches%20apart,%20staggering%20them%20so%20they%20won't%20touch%20when%20baking.%20Using%20your%20hand,%20press%20each%20dough%20ball%20to%201%20inch%20thickness.%20Bake%20both%20sheets,%2012%20minutes,%20rotating%20them%20front%20to%20back,%20and%20top%20to%20bottom.%20Then%20continue%20to%20bake%20cookies%20until%20they%20are%20medium%20brown%20and%20edges%20have%20begun%20to%20set%20but%20centers%20are%20soft%20and%20seem%20under%20done,%20and%20wet%20and%20shiny%20in%20cracks.%20This%20is%20supposed%20to%20be%208-10%20minutes%20longer.%20Do%20not%20over%20bake.%20Enjoy%20these%20awesome%20cookies!%3C/p%3E%3Cp%3ENOTE:%20To%20toast%20pecans,%20place%20on%20a%20baking%20sheet%20in%20a%20350%20degree%20oven%20for%204-5%20minutes.%20Watch%20closely!%3C/p%3E%3Cp%3EHere%20is%20the%20link%20to%20the%20original%20directions,%20but%20Cook's%20may%20not%20keep%20this%20open%20for%20long.%3C/p%3E){kind=link}
