Chocolate Chip Oatmeal Cookie Pancakes
In my opinion, the measure of how much you love someone is proportionally related to how much sleep you're willing to sacrifice for them. For example, I am willing to wake up at 8:00 am on the first Saturday of every month just so I could take my dear nephews to their beloved Home Depot Kids Workshop. I am also willing to let them stay the night at my place and sleep in my room, even though that means lots of sleep talking, endless rustling of bedsheets, and occasional thuds from them bumping into the walls all night long. In more or less words, barely any sleep for me.
What I'm trying to get at here is that I love you guys a lot too. My readers, my followers, my commenters, the people who randomly stumble onto here--you mean the world to me. That's why today, I decided to wake up early for a change and make these chocolate chip oatmeal cookie pancakes for breakfast just so I could share them with you.
There's a reason why you don't see many breakfast foods on the blog-- I'm not exactly a morning person. And I'm not that big on breakfast either. On the rare occasion that I do wake up before 11 am, my breakfast is usually cereal or some kind of fruit concoction I've whipped up in the blender. Certainly no cooking involved. But love changes people.
Now you don't necessarily have to make these just for breakfast, as they're awesome enough to be eaten at any time of the day. But they're particularly awesome for breakfast because they're packed with all these ingredients that are so good for you and will have you charged up and ready for the day. They've got flax seed which has lots of fiber, peanut butter which has protein, a banana which has potassium, milk which has calcium, whole wheat flour which has lots of nutrients like Vitamin B and zinc, and rolled oats which are healthy carbohydrates and have even more fiber.
If you love all of that, then you're definitely gonna love what these pancakes don't have even more: sugar and butter. That's right, these babies don't have any added sugar or butter. The banana provides most of the sweetness, as do the chocolate chips. Of course, you can always add a drizzle or dollop of syrup if you have a really sweet tooth like I do.
You can also adapt the ingredients to make these gluten-free or vegan friendly. It's up to you. I just ask that you make these like ASAP, because they will change breakfast for you forever.
Chocolate Chip Oatmeal Cookie Pancakes
Yield: 5 small pancakes
Ingredients:
- 1 flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water)
- 1 very ripe medium banana
- 1 teaspoon baking powder
- pinch of salt
- pinch of vanilla powder (or 1/2 teaspoon vanilla extract)
- 1 tablespoon peanut butter
- 1 tablespoon canola oil
- 3 tablespoons milk
- 1/2 cup rolled oats
- 1/4 cup whole wheat flour
- 1/4 cup semi-sweet chocolate chips
Directions:
Prepare flax egg by combining flaxseed meal and water and letting them sit for 3-5 minutes.
In a medium-sized bowl, mash banana with baking powder. Add flax egg, salt, vanilla, peanut butter, oil, and milk. Stir to combine.
Add oats and flour, and stir until just combined. Add chocolate chips and fold in gently.
Heat a skillet over medium heat. Lightly spray with cooking spray. Scoop scant 1/4 cup measurements of batter onto hot skillet. Cook for 2-4 minutes on each side, or until golden brown.
Serve pancakes plain or with syrup and additional chocolate chips.
