%20was%20a%20big%20part%20of%20our%20time%20in%20Mexico,%20and%20a%20decade%20later%20I%20can%20really%20see%20how%20it%20has%20influenced%20my%20palette%20and%20my%20cooking%20style.%20Tequila,%20lime,%20cilantro,%20jicama,%20beans,%20chilies,%20tortillas%20--%20these%20are%20some%20of%20my%20favourite%20things.%20(Except%20for%20chicharr%C3%B3n%20-%20I%20never%20learned%20to%20like%20that%20stuff!)%20Another%20thing%20I%20never%20learned%20to%20love%20was%20mole%20(the%20sauce,%20not%20the%20animal,%20although%20I%20wouldn't%20like%20that%20either.)%20So%20when%20my%20friend%20PJ%20told%20me%20about%20this%20amazing%20chili%20recipe%20that%20uses%20unsweetened%20baker's%20chocolate,%20I%20was%20a%20little%20skeptical.%20I%20trust%20PJ%20though,%20and%20she%20didn't%20let%20me%20down!%3C/p%3E%3Cp%3EShe%20said%20she%20got%20the%20recipe%20from%20allrecipes.com,%20but%20I%20couldn't%20find%20the%20actual%20link%20for%20it.%20I%20made%20a%20few%20changes%20to%20it%20anyway,%20so%20here's%20my%20version:%3C/p%3E%3Cp%3EBrown%20beef%20over%20high%20heat%20and%20set%20aside.%20Reduce%20heat%20and%20saut%C3%A9%20onion,%20garlic,%20chili,%20and%20red%20pepper%20until%20soft.%20Add%20beef%20and%20stir%20in%20remaining%20ingredients%20(except%20for%20beans,%20corn,%20cilantro,%20and%20lime%20juice).%20Cover%20and%20simmer%20for%202%201/2%20hours.%20Add%20beans%20and%20corn%20and%20simmer%20for%20another%20hour.%20Remove%20cinnamon%20stick%20and%20bay%20leaves.%20Stir%20in%20cilantro%20and%20lime%20juice,%20and%20serve%20with%20sour%20cream%20and%20cheese%20on%20top.%3C/p%3E%3Cp%3EThis%20was%20delicious!%20There%20was%20just%20the%20tiniest%20hint%20of%20chocolate%20and%20lime%20-%20you%20wouldn't%20even%20notice%20it%20if%20you%20weren't%20looking%20for%20it,%20but%20it%20adds%20a%20little%20something.%20With%20the%20exception%20of%20the%20beans,%20my%20kids%20both%20loved%20this%20chili.%20And%20hey,%20even%20I%20picked%20out%20the%20beans%20when%20I%20was%20a%20kid.%3C/p%3E){kind=link}
