%20In%20my%20search,%20I%20found%20this%20fantastic%20one%20from%20Kait's%20Plate.%20What%20makes%20it%20so%20fantastic?%20Sweet%20potatoes!%20They%20are%20so%20good%20and%20full%20of%20nutrients%20and%20just%20a%20lot%20more%20fun%20than%20regular%20potatoes.%20What's%20not%20to%20like??%20It%20is%20filling%20because%20of%20the%20heartiness%20of%20the%20potatoes,%20a%20little%20bit%20creamy%20because%20of%20the%20cream%20and%20butter,%20and%20has%20a%20good%20flavor.%20I%20almost%20always%20adjust%20spices%20in%20recipes,%20but%20all%20I%20did%20here%20was%20add%20a%20bit%20of%20cumin,%20though%20it%20honestly%20didn't%20need%20it.%20Next%20time%20I%20may%20use%20an%20immersion%20blender%20on%20it%20for%20a%20few%20seconds,%20just%20to%20give%20it%20a%20little%20more%20thick%20stuff%20holding%20it%20together.%3C/p%3E%3Cp%3EI%20admit%20that%20this%20was%20not%20AT%20ALL%20quick%20when%20making%20about%2070%20servings.%20Yep,%20we%20used%2032%20pounds%20of%20sweet%20potatoes.%20Do%20you%20realize%20how%20long%20those%20take%20to%20peel?%20And%20chop??%20To%20be%20perfectly%20honest,%20I%20may%20not%20have%20felt%20so%20ambitious%20if%20I%20had%20known.%20But%20now%20that%20it's%20done,%20I%20am%20happy.%20Because%20it%20was%20quite%20tasty.%20Spicy%20enough%20to%20deserve%20the%20name,%20but%20mild%20enough%20that%20nobody%20got%20a%20runny%20nose%20or%20thought%20it%20was%20too%20hot.%20A%20couple%20of%20%22not%20soup%20people%22%20even%20went%20back%20for%20seconds.%20And%20it%20was%20extra%20wonderful%20because%20dinner%20turned%20out%20to%20be%20so....%20sparse.%20I%20was%20one%20of%20the%20last%20ones%20in%20line,%20so%20several%20things%20were%20out%20by%20the%20time%20I%20got%20there%20and%20I%20ended%20up%20with%20asparagus%20and%20zucchini%20in%20tomato%20juice.%20Hmmm...%20Luckily%20I%20know%20how%20to%20find%20other%20food%20:)%3C/p%3E%3Cp%3EI%20made%20two%20versions:%20one%20veggie,%20one%20chicken.%20For%20the%20veggie%20one,%20I%20used%20vegetable%20stock%20to%20make%20it%20truly%20vegetarian.%20If%20I%20were%20to%20make%20it%20just%20for%20myself,%20I'd%20use%20chicken%20stock%20and%20then%20just%20not%20put%20in%20chicken.%20That's%20why%20they%20call%20me%20a%20'fake%20vegetarian'%20around%20here.%20For%20the%20chicken%20one,%20we%20had%2010%20lbs%20of%20chicken,%20so%20for%20a%20single%20recipe%20that%20would%20be...%202.5%20lbs.%20It%20was%20a%20lot,%20though,%20far%20too%20much%20I%20think,%20so%20I'd%20actually%20suggest%201.5%20lbs,%20max.%3C/p%3E%3Cp%3EChipotle%20corn%20chowder%3C/p%3E%3Cp%3EServes:%208%20Cook%20time:%2040%20minutes%20(that's%20quite%20a%20guess!)%3C/p%3E%3Cp%3E-%20Heat%20butter%20in%20a%20large%20pot%20over%20medium%20heat.%3C/p%3E%3Cp%3E-%20Add%20sweet%20potatoes%20and%20onion%20and%20cook%205%20minutes.%3C/p%3E%3Cp%3E-%20Add%20flour%20and%20stir%20into%20the%20onion%20and%20sweet%20potato.%3C/p%3E%3Cp%3E-%20Gradually%20add%20chicken%20stock%20while%20stirring.%3C/p%3E%3Cp%3E-%20Add%20corn,%20chipotle%20peppers,%20cream,%20and%20thyme%20and%20bring%20to%20a%20simmer.%3C/p%3E%3Cp%3E-%20Reduce%20heat%20to%20low%20and%20simmer%20about%2010-15%20minutes,%20or%20until%20the%20sweet%20potatoes%20are%20fork-tender%20but%20not%20falling%20apart.%3C/p%3E%3Cp%3E-%20Remove%20from%20heat%20and%20season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E-%20Garnish%20with%20cilantro%20(or%20avocado%20or%20tortilla%20chips,%20if%20you%20like).%3C/p%3E%3Cp%3ENutrition%20info%20(1/8%20of%20veg%20recipe,%20no%20toppings):%20Fat%20-%207.9g%20Cal%20-%20269%20Carbs%20-%2046%20Protein%20-%205.5g%3C/p%3E){kind=link}
