- Marinate chicken in salt and cooking wine for about 10 min. While it is marinating, make a thickening sauce with soy sauce, oyster sauce, sugar and 2 Tbsp. water, set aside. Dust chicken with cornstarch and fry in deep oil. When done, remove from oil and set aside. Using only 2 Tbsp. of leftover veg. oil, stir fry ginger and garlic a few seconds, then add in red pepper and green onion and stir fry for about 2 min. Add in mushrooms, grapes and chicken. Toss around a few min, then add in thickening sauce and bring to a boil. Toss in peanuts and 2 Tbsp. Chinese cooking wine and serve.
