- Slice the scallops and fry in the oil for 5-6 min till tender then remove from pan.
- Fry the ginger, spring onions and cucumber for 2 min then add in the scallops. Sprinkle over the flour then add in the rest of the ingredients. Stir fry till thoroughly mixed and divide between 4 scallop shells or possibly small dishes.
- Serve immediately as a starter.
