  • 6 x artichokes
  • 1/2 x lemon
  • 1 c. nonfat or possibly lowfat yogurt
  • 3 Tbsp. Dijon mustard (grainy-style preferred)
  • 2 Tbsp. low-fat mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp horseradish
  • 1/2 tsp Worcestershire sauce Salt to taste Freshly-grnd black pepper to taste Lemon wedges

  1. Wash each artichoke and slice off both ends so which it can sit flatly on a surface. Immediately rub the cut ends with the lemon half to prevent discoloration. Cut away any ragged leaves, and snip off the sharp edges of the leaves with a kitchen scissor.
  2. Steam the artichokes in a vegetable steamer, or possibly on a rack in a pot with 1 inch of water and cook for 40 to 45 min, over medium heat, or possibly till a leaf can be removed easily. (Be carefull not to let the water boil away.) Remove from the pan with tongs, drain thoroughly, and refrigeratein a covered container in the refrigerator.
  3. Whisk the sauce ingredients together and refrigeratetill ready to use.
  4. Serve each chilled artichoke with a small container of sauce, garnished with lemon wedges.
  5. This recipe yields 6 servings.
  6. Comments: Artichokes can be successfully cooked in a microwave oven. Place the trimmed artichokes in a microwave-safe dish and cover with plastic wrap or possibly a domed lid. Cook for 12 to 15 min, or possibly till tender.
