- Cut chicken into 12 pcs and sprinkle with kosher salt. Chill 1 hour. Remove from refrigerator and pat dry.
- In a 14-inch saute/fry pan, heat oil till just smoking. Brown pcs till dark golden, 4 to 5 at a time. Remove all chicken and add in salt pork cubes. Cook till golden and add in onions, garlic and peppers. Saute/fry till softened, about 4 to 5 min. Add in chicken stock and chicken pcs. Simmer 15 min till reduced by three-quarters. Add in tomatoes, olives, chili flakes and cinnamon and cook 5 min. Season with salt and pepper and serve.
