.%20%20Two%20hours%20of%20time%20which%20I%20truthfully%20didn't%20have.%20%20You%20can%20imagine%20my%20irritation%20and%20frustration%20when%20I%20clicked%20%22Publish%20Post%22%20only%20to%20have%20the%20entire%20thing%20evaporate%20into%20cyber%20air.%20%20Gone.%20%20What%20the%20heck?%3C/p%3E%3Cp%3ESo...here's%20the%20Cliff's%20Note%20version:%20%201)%20We%20repainted%20the%20entire%20exterior%20of%20our%20home%20while%20trying%20to%20keep%20an%20eye%20on%20our%20boys%20and%20not%20make%20their%20lives%20miserable,%3C/p%3E%3Cp%3EPapering%20and%20taping%20every%20window%20and%20door%20to%20protect%20them%20from%20the%20spray%20of%20paint%3C/p%3E%3Cp%3Etook%20an%20insanely%20long%20time.%3C/p%3E%3Cp%3EThe%20boys%20had%20a%20blast%20playing%20in%20the%20dirt%20while%20I%20covered%20the%20windows.%3C/p%3E%3Cp%3E2)%20About%2015%20minutes%20after%20the%20picture%20above%20was%20taken,%20Matthew%20(2%20years%20old)%20busted%20his%20chin%20open%20and%20we%20had%20to%20go%20to%20the%20ER%20to%20get%20stitches,%3C/p%3E%3Cp%3Eand%3C/p%3E%3Cp%3E3)%20%20One%20of%20my%20very%20best%20friends%20had%20her%20baby%203%20weeks%20early.%20%20No%20epidural%20(she%20was%20planning%20to%20get%20one...not%20enough%20time).%20%20At%20the%20hospital.%20%20With%20no%20doctor%20in%20sight.%20%20A%20nurse%20caught%20the%20baby.%20%20I%20had%20promised%20and%20pledged%20to%20be%20there%20to%20help,%20but%20alas,%20I%20couldn't%20leave%20my%20husband%20in%20the%20painting-the-house-while-watching-the-kids%20lurch.%20%20I%20cried%20cruel%20tears%20of%20frustration,%20wishing%20I%20could%20be%20in%20two%20places%20at%20once.%3C/p%3E%3Cp%3EBeth,%20Judson,%20and%20Baby%20Wynn.%3C/p%3E%3Cp%3ERaise%20your%20hand%20if%20you'd%20like%20to%20look%20this%20gorgeous%20moments%20after%20natural%20childbirth.%3C/p%3E%3Cp%3ETake%20note%20of%20the%20pretty%20quilt%20and%20sham%20she%20brought%20from%20home.%20%20:)%3C/p%3E%3Cp%3EBig%20Brother%20Lex%20meeting%20his%20baby%20brother%20for%20the%20first%20time.%3C/p%3E%3Cp%3E**SPLAT**%20-%20that%20was%20the%20sound%20of%20my%20heart%20bursting%20at%20the%20seems%20from%20the%20pure%20sweetness%20of%20this%20moment.%3C/p%3E%3Cp%3ESo%20in%20celebration%20of%20the%20paper%20coming%20off%20of%20my%20windows%20yesterday%20(Yay!!%20%20Natural%20light%20is%20very%20underestimated.),%20Matthew's%20stitches%20coming%20out,%20and%20Beth's%20healthy%20baby%20boy,%20I%20decided%20to%20make%20this%20balsamic%20sauce%20for%20supper.%3C/p%3E%3Cp%3EStart%20by%20sauteing%20chicken%20breasts%20or%20thighs%20until%20cooked%20through.%3C/p%3E%3Cp%3ETransfer%20meat%20to%20a%20plate%20and%20cover%20with%20foil%20to%20keep%20warm.%3C/p%3E%3Cp%3EIn%20the%20same%20skillet%20(don't%20rinse%20it%20out!),%20saute%20a%20shallot...%3C/p%3E%3Cp%3E...until%20nicely%20browned.%3C/p%3E%3Cp%3EAdd%20the%20cream%20and%20half-and-half%20mixture,%3C/p%3E%3Cp%3Escraping%20the%20bottom%20of%20the%20skillet%20to%20loosen%20the%20yummy%20bits.%3C/p%3E%3Cp%3EBring%20it%20to%20an%20energetic%20simmer...%3C/p%3E%3Cp%3EUntil%20it%20thickens%20and%20you%20can%20%22part%22%20it%20with%20your%20spoon.%3C/p%3E%3Cp%3EAdd%20in%20the%20balsamic%20vinegar%20and%20honey.%3C/p%3E%3Cp%3EWhisk%20well.%20%20Add%20a%20splash%20or%20two%20of%20cream%20if%20it's%20too%20thick.%3C/p%3E%3Cp%3ESpoon%20over%20the%20chicken%20and%20sprinkle%20with%20additional%20sage,%20if%20desired.%3C/p%3E%3Cp%3EEnjoy.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20large%20skillet.%20%20Wash%20and%20pat%20the%20chicken%20dry%20with%20a%20paper%20towel.%20%20(Moist%20meat%20does%20not%20saute%20well.)%20%20Saute%20chicken%20over%20medium-high%20heat%20for%20approximately%207-8%20minutes%20per%20side%20until%20cooked%20through%20(cook%20time%20will%20depend%20of%20thickness%20of%20meat).%20%20Season%20with%20salt%20and%20pepper.%20%20Transfer%20chicken%20to%20a%20plate%20and%20cover%20with%20foil%20to%20keep%20warm.%20%20DO%20NOT%20WASH%20SKILLET.%3C/p%3E%3Cp%3EAdd%20shallots%20to%20the%20skillet.%20%20Stir%20with%20wooden%20spoon%20and%20saute%20for%203-5%20minutes%20until%20well-browned.%20%20Add%20the%20cream,%20half-and-half,%20salt,%20and%20sage.%20%20Cook%20over%20medium-high%20heat%20stirring%20constantly%20for%205-6%20minutes%20until%20cream%20has%20thickened%20(you'll%20be%20able%20to%20%22part%20it%22%20with%20your%20stirring%20spoon).%20%20Add%20the%20balsamic%20vinegar%20and%20the%20honey.%20%20Use%20a%20whisk%20to%20combine%20well%20and%20remove%20from%20heat.%20%20(If%20the%20sauce%20is%20too%20thick,%20you%20can%20thin%20it%20by%20whisking%20in%20a%20small%20amount%20of%20cream.)%3C/p%3E%3Cp%3EDivide%20chicken%20among%20plates%20and%20top%20with%20sauce.%20%20It%20is%20also%20delicious%20over%20rice%20or%20pasta.%3C/p%3E){kind=link}
