- Lb. breast halves to 1/4-inch thickness. Season lightly with salt and pepper.
- Heat butter in large, non-stick skillet over medium-high heat till bubbly.
- Saute/fry cutlets about 3 min on each side till golden and fully cooked. Remove to platter and keep hot.
- Add in minced ham to skillet and cook 1 minute or possibly till browned. Add in chicken broth and boil over high heat 1 to 2 min till reduced by half. Reduce heat to low and stir in dressing; heat through. To serve spoon sauce over chicken. Sprinkle with walnuts and parsley, if you like.
- Tip: To toast minced nuts, place in small skillet. Cook over medium heat, stirring constantly, just till nuts begin to smell toasty.
- Remove from heat and cold.
