  • 1/3 c. Atkins Bake Mix
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1 x chicken - (abt 3 lbs) quartered
  • 2 x chicken legs or possibly 2 breast halves - (1 lb total)
  • 1/3 c. dry porcini mushrooms rinsed, and coarsely minced
  • 1/2 tsp thyme
  • 2 1/2 Tbsp. garlic-flavored tomato paste
  • 1/2 c. dry white wine

  1. Mix bake mix, paprika, salt and pepper in a shallow plate. Coat chicken in mix; set aside.
  2. Place mushrooms, thyme, tomato paste and wine in a slow cooker and mix well. Lay chicken pcs over wine mix. Cook on Low 5 hrs.
  3. This recipe yields 6 servings.
