Рецепт Chicken Stuffed with Feta Spinach and Basil
This is a recipe I saw on the morning TV show The Chew by Maria Menounous and her mother. I found the recipe not specific enough so I altered slightly as I prepared it. It was really good. The sauce was even better with the leftovers. I paired mine with steamed baby spinach.

- Pre-heat oven to 375 degrees.
- Pound out each chicken breast piece to a thin cutlet.
- In a large bowl mix the stuffing ingredients together: Feta Cheese, crumbled, spinach, parsley, garlic, olive oil and pepper.
- Spoon out 1/4 of the stuffing on each flattened chicken breast and roll with the seam at the bottom. Use a toothpick to hold together if needed.
- Place in a small baking dish brushed with oil and bake 35 mins.
- While the chicken is baking prepare the sauce. Combine the tomato sauce, mango, jalapeno and pepper and salt in a small sauce pan. Bring just to a boil and then turn down to simmer. Stir often for 15 minutes or until the sauce thickens.
- Spoon the sauce over chicken pieces.
