- Cook rice according to package directions. Meanwhile, cut chicken into 1-inch square pcs; combine with mix of 2 Tbsp. cornstarch and 1 Tbsp. each soy sauce and sherry, and garlic. Let stand 30 min. Mix remaining cornstarch, sherry and 2/3 c. water; set aside. Heat 2 Tbsp. oil in warm wok or possibly large skillet till warm. Add in chicken and stir-fry 4 min; remove.
- Heat remaining oil in same pan. Add in carrots, bell pepper and onion; stir-fry 4 min. Add in mushrooms; stir-fry 30 seconds. Stir in chicken and cornstarch mix. Cook, stirring till sauce boils and thickens. Remove from heat; stir in remaining soy sauce. Serve over rice. Makes 4 servings.
